EGGS BENEDICT
1 Serving
Sauce Ingredients
2 Egg Yolks
1+1/2 Tbsp. Lemon juice
1 Tbsp. Water
4 Tbsp. Salted butter melted
Sprinkle Cayenne Pepper
Salt & Pepper to taste (pinch)
Other Ingredients
2 Thin slices Canadian Bacon
2 poached eggs
2 Tbsp. White vinegar
Water-approx. 1 quart to poach egg
Slotted spoon
Whisk
Sauce pot
1 Cup measuring cup
Small bowl
8” skillet
Butter for the muffins.
A few slices of fresh tomato
Here’s How To Make The Sauce
Using your glass measuring cup, melt 4 Tbsp. butter in the microwave. It’s got to be completely melted.
In a mixing bowl, add two egg yolks, water, lemon juice, a pinch of salt & pepper and a sprinkle of cayenne pepper.
Add water to the skillet and bring to a boil. Lower the heat to medium. Put the mixing bowl inside the skillet of water.
Whisk while the mixture heats up and cooks. The sauce will thicken. Give it a few minutes. Don’t worry. It’ll thicken. You may even need to add a bit more water.
Once the sauce has thickened, set the bowl aside.
Pour out the water.
Brown up the Canadian bacon.
Meanwhile, toast your English muffin.
In a sauce pan, bring about 1 quart of water to a boil.
Add vinegar and stir.
Reduce heat to a simmer.
Crack two eggs and gently lower them into the hot water.
Set a timer for 3 minutes.
Meanwhile add a spoon of Hollandaise sauce to the muffin.
Add two slices of Canadian bacon.
Now take out the poached egg out of the water and allow the water to drip off onto a paper towel. Now gently add the poached egg to the top of the Canadian bacon.
While the water is hot, put the sauce bowl back into the hot water. You can also microwave the sauce for a few seconds.
Add a Tbsp of water to the sauce and whisk until the sauce thins out.
Drizzle as much Hollandaise sauce over your Egg as you like.
Sprinkle a dash of Cayenne pepper on top.
Add several slices of fresh sliced tomato to your plate.
Stare at your master piece for about 10 seconds.
Take a few pictures and dig in. It’s going to be delicious.
What makes this even better is to have someone else clean up the kitchen!
Chef’s Notes:
You can add 1 tsp. of Dijon mustard to the sauce if you like.
Traditionally, eggs Benedict has no mustard. But make it your own. Play around with flavors. You just might be surprised.
Just be careful with the salt.
You don’t need to add the tomato if you don’t want. We always add tomato because we love tomato with our Eggs Benedict.
