Eve, here in the states they have an amazing gourmet food store I think you would love! They have specialty olive oils, balsamic vinegar, and stuffed olives. You can go around sampling each item by dipping a piece of french bread into any oil or vinegar of your choice. My favorite was the apricot balsamic vinegar! And the kalamata olive oil was delicious =) The olives are also amazing. The garlic stuffed was amazing! If you are ever in Califormia, I would suggest going there!

sorry i keep posting one after another, haha. since you have herbs de provence, i suggest for a homemade salad dressing you try mixing the herbs with simple olive oil and balsamic vinegar, keep it in a jar in your fridge. it's so quick and delicious.
