    Omg been diagnosed with celiac disease ,I tried this the other day it's been a life saver it came out fantastic never made bread before ever I added some sunflower seeds in the dry mix amazing I used a metal tim but coated it with lard and added grease proof paper inside to it so it didn't stick , came out perfect ,

    The rise, the taste, the texture...perfection! This method of rising the dough worked like a charm. By far, the best gluten free bread recipe out there! Too many of them taste terrible or collapse after baked but not this one! I made my own bread flour as per your instructions and didn't need as much liquid but I learnt where you live can dictate the amount of liquid a recipe requires. No problems removing from my metal loaf pan because I lathered it up with shortening as you indicated we should. Amazing recipe! Thank you!

    I've tried at least 4 other Gluten free bread recipes and this one always turns out the absolute best!!
    I've tried it in my bread machine by just throwing all the ingredients in and it still turns out great.

    Just made my first loaf with the John-Kirkwood-Gluten-Free sandwich bread recipe. It came out better than the five other methods (all of which used a bread maker). I made the gluten free flour using John's recommendation. I did not use eggs and substituted ground chia seeds soaked in hot water (2 Tablespoons seeds, ground, soaked in hot water for 5 minutes and added 1 Tablespoon of Lecithin for emulsification). Aside from the color being darker (chia seeds are black), this loaf came out spectacularly well and was light, fluffy and crusty with a soft interior. It rose to full height (my pan is metal, John's is silicone coated but both are the same size) and my baking was at 6,060 feet in the Rocky Mountains of Wyoming. Elevation makes a difference, but all worked out well! Many thanks to you, John! You have made a difference in my life.

    Good evening John, I made your bread yesterday and I have to say that it's the first good tasting gluten free bread I tasted and made. I've been looking for 3 years for a simple and good recipe, and your does it. ITS THE BEST !!!!

    I had visitors last week and one of them is gluten intolerant so i made this loaf beforehand. I couldn't prove it the way you did but it worked just fine in an oven on 25° and fan and it turned out really well. I froze it in slices of 2 and even the husband who isn't gluten intolerant are it and said it was lovely. Thank you for all the hard work you put on to give us such a good recipe.. I've shared it with friends too

    This is a message to the Gentleman from New York who left a comment earlier about an alternative to eggs in this GF recipe, as his daughter is allergic to them, my apologies I inadvertently deleted your comment, but if you read this here an alternative to eggs. Replace the eggs with 20 grams of chickpea flour mixed with 60 grams of water in this recipe. Hope you get this message my friend. John.

    I have made regular bread for 50 years. I just found out that I can only have gluten-free. I am having a hard time getting the loaves right. This looks amazing. Thanks so much John for your excellent video. That is an amazing loaf.

    I do a LOT of gluten free baking (the hubs is celiac and LOVES bread) and this recipe is by far the best sandwich bread recipe that I have tried. Its excellent! I do a simple modification if anyone interested, by using 1 t xanthan and 1 t psyllium powder to add a bit of wheat-ness(?) and do this with most of my GF breads. One more thing, I lined my pan with parchment and this worked well here because when the bread raised, it went straight up and didn't stick to the pan. THANK YOU for this easy and fabulous recipe and technique!

      Oh will definitely try this hack Lori since mine stuck to the pan and i would have loved it to rise more. Also is it some special psyllium husk or can I use metamucil since I always have that at home?😂

    John, I just made your bread, it is amazing. No more looking for the right bread, you did all the work for me. Thank you so much. I experimented also I ordered the gluten flour but it has not gotten here yet so I adjusted gluten-free pancake mix: It is more cake-like but I can tell this is a keeper. It is perfect the way it is now also.

    I don't often make comments on youtube, but I feel compelled to on this one....I have been searching for a GOOD gluten free bread recipe for ages. Thank god I found this video. My grandmother suffers from celiacs disease (meaning she cant have gluten or she gets hives) I learned to bake gluten free for her sweet tooth, but for the longest time I couldn't find a good substitute for her sandwich bread. Until now. This recipe worked! The bread is soft and moist inside and has a decent crust. No more horrible store-bought gluten free bricks anymore! Thank you for this tutorial! I think I'll try your scotch egg recipe next, never had one before but it looks delicious!

    The parchment paper worked! (Although I will still buy a silicon loaf pan) I greased the metal, cut the parchment to fit like a slip under the loaf and up the long sides to about 2” above the rim. The bread turned out beautifully. My toddler is going to be so happy at breakfast.

    Ok, I tried this today. Although I got no rising from the hot water in the sink method I did get it to rise by setting it on the stove top. I am so excited because it's the first time I've managed to get a usable gluten free loaf. Thank you so much!!!! I wish I could post a picture here....it turned out beautifully. No more expensive, yucky, store bought bread! ♡

    Thanks for a great recipe and directions! My son was recently diagnosed as celiac. I made this recipe today for the first time, using your very clear directions and it turned out perfect! This bread also tastes so much better that store bought. I very much appreciate that you provide mass (grams) measurements as I have learned to cook with my electronic scales, it is so much more repeatable versus volume measurements.

    I just discovered your channel. I look forward to checking out your other videos. As a person with Celiac Disease, I can tell you that commercial gluten free bread is tasteless, falls apart in your hand, and is 2 to 4 times more expensive than traditional breads. It also comes in very tiny loaves. You have several good tips, which I appreciate, especially in regards to browning. Gluten free bread does not brown easily. I look forward to trying this. However, I have a small tip for you. In the USA, corn flour and corn starch are 2 distinct and different items. Corn flour is exactly that, finely milled corn with the consistency of wheat flour, soft and powdery. Corn starch is a white starch refined from corn, but virtually tasteless and lacking nutrients. It is very useful for this kind of bread making, but thought you might want to avoid confusion in the future. I find your instructions clear and easy to follow.

    By far the best gluten free bread I've come across! Thanks so much. I'm new to this gluten free hell and I've tried quite a few recipes so far and this is by far the best tasting, normal white bread type recipe I've had, or any type for that matter. I love how you put down all the exact measurements for each ingredient and give people many choices in that regard. Gluten free baking seems to totally be dependant on exact amounts. Thanks again!

      Would this recipe work for making gluten free sub buns or Hamburger buns? I'd assume yes, but I don't wanna assume just because it's gluten free and sometimes portion sizes seem to matter

    Hi John! An update on my attempts at this recipe. I never could get my loaf to rise as much as yours, so I increased the hydration. I think my flour mix (Shär brand) has more corn starch and made the mix more dense. At 500 grams of water, I have a loaf that rises twice as high. Thanks for all the inspiration and for encouraging us to experiment a bit! Hope all is well. Cheers!

      I wish I had read your comment before making this loaf!!! I've used my own gf flour blend as I can't do corn. But the batter was quite thick (like bread dough) I wanted to add more water, but for fear of a soggy collapsing loaf I resisted. Bread in the oven now! Will see what happens 🤞

    I made this bread recipe today and oh my god! I’m beyond thankful to you for this amazing recipe! I’ve been trying to make a successful GF bread for years. I followed a lot of recipes and non of them worked, Even the ones that worked didn’t give me such perfect results! You’re so talented and knowledgeable. Please keep the good work! For those who are wondering if it’ll work without the sugar, Yes it will! I replaced the sugar with the same amount of maple syrup and dissolved it in the water.
    It would be amazing if you could make a GF noodles and GF burger buns! Thanks again for the recipe May Allah bless you with health and happiness👏🏼❤️❤️❤️

    I just finished making this bread (6 minutes ago) and it turned out EXACTLY like John's (maybe even better, dare I say 😊😊). No kidding. It turned out great. Why? Because I measured all the ingredients exactly as per the recipe AND I followed all the instructions to the letter, or RUclips channel in this case. This is the first white sandwich bread that is actually better than any other we have tried. By far. My wife is Celiac and she loves this bread. Two Thumbs and Two Big Toes up.
    Hey!! Where did the bread go I just made? Honey?... Honey?... did you just eat that whole loaf of bread?
    BTW... I AM CANADIAN, eh?

    I can’t believe I forgot the eggs. I’ve been glutenfree for 20 years, but I never had time to bake as work was so intensive because I am a nurse practitioner. I used to bake regular bread all the time before I knew I had Celiac Disease. I found kneading dough back then relaxing. Your video was the best one I have found hands down!     Been coeliac from birth and this is the best looking home made loaf I've seen come out of an oven since my mother used to make it at home for me as a kid 45 years ago. Can't wait to try it myself. Looks light and fluffy unlike some of the "bricks" I've cut into over the years of trying to make it at home myself. I learned about 12 months ago that I'm seriously allergic to gluten, it explains exactly why I am 300 pounds. I've been looking and digging and going and running and trying to find a recipe, for a delicious lovely loaf of bread that will not absolutely kill me. So thank you very much John you are a lifesaver!! Because store bought gluten-free bread taste like a clay brick.

    Finally a recipe that actually works! Thanks a lot. I wish I could also make buns out of this dough. My son is gluten intolerant and store bought bread is too stale and expensive.     I've tried a few different recipes for a GF loaf throughout lockdown and hands down this has been the most successful!!! I had the added challenge of needing make without eggs due to my son's allergies. We used Orgran's egg replacer and achieved a decent rise but not as good as yours. My son gave his seal of approval after school and this is going to be a weekly bake to replace the expensive shop bought breads. Can't thank you enough, keep up the great work and would love to hear your thoughts on allergy free cooking in future receipes.

      Quantities are very important in this recipe Linda, use digital scale for everything, including the water, in grams not fluid ounces.

    So many gluten free recipes call for a complex mixture of numerous kinds of flours. I can neither afford to stock them all, and if I did, a purchased loaf would be cheaper even at the exorbitant prices they charge! I was so glad to find a recipe with simple, easily found and inexpensive ingredients! My first 2 loaves are baking as I write this. I am hopeful that this recipe and your technique will become our gf bread solution!

    Hello John, and happy new year to you. I made a comment a few months ago regarding this beautiful tasting gluten free bread. My partner has now made many loaves sticking rigidly to your recipe, with success every time. I hope it is alright to say that we experimented recently and scaled up the recipe a bit. I purchased a 3Lb bread tin, and added 50% to all the ingredients. By extending the baking time to 50 minutes we have now made three loaves that have all been a success.     John, thanks for this recipe. We have friends whose entire family has gluten sensitivity. When we invite them over for a meal, the wife always brings her own bread. Since I am a baker, this bothers me that they can’t enjoy my masterpieces, neither yeast nor sourdough bread. Now I’ve got a great recipe for gluten free bread. Once I’ve tried it out on ourselves, we’ll invite them again and tell them to leave their bread at home. This bread looks so good! No hint of it being a substitute. I’m looking forward to sharing the recipe with them.

    Hi I have battled for a long time with the flour you use in this video and have ended up with 'bricks'. So I followed your demonstration and instructions, the difference being I have metal tins, which are a little larger, I lined the bottom with baking parchment, proving time took a slightly longer for the dough to rise but the result was a complete success. Thanks John for posting this I am really pleased with the resuults.

    Really wish I had seen this...my now husband and I were just over the chewy bread nugget wars and I was building my gluten free bread flour. Would be afraid to use psyllium husk with this...already looks gorgeous.
    Bread had never been that interesting to me until I learned my body and mind was rejecting gluten. Heavy days after pasta also.

    I wrote earlier saying I had a problem with some GF flours..... But I've done my reseach and will be trying this wonderful recipe using Buckwheat & Brown Rice flours... once my Xanthan arrives! I'll keep trying until I achieve something at least similar to your incredible result. I haven't eaten bread; had toast or a sandwich for many years and your video has inspired me (the world's worst cook) to give home-made bread a try. Thank you so much for putting this easy to follow recipe/method on line. Brilliant job.

    Hi John made this and it rose so high and cooked exactly same colour as yours Can other flours be used e.g. to replicate wholemeal type gluten bread as I have buckwheat , oat. cornmeal(millett) if the latter is suitable for gluten free bread making & sorghum flours etc That would be brillant

      Yes, I would believe that you can definitely experiment with different gluten-free flours to replicate a wholemeal-type gluten-free bread.

    Hello John! I wanted to thank you for posting this recipe, I’ve made it twice and I love it! I cannot say the same for my other GF breads. I have replaced 1/2 cup of buckwheat flour to complete 4 cups of GF flour. The rest of the ingredients are the same as yours. I like the flavor of buckwheat flour. The bread box is ingenious and I had never seen it before! I am going to continue looking at your bread videos and see what else I can adapt for GF! Thank you so much. Greetings from NC in the USA!

    I baked this bread and it rose beautifully. I had one issue with the bread being very saturated with oil. I weighed both oils to 45 gm each. Should I reduce the oil to 36 gm for each olive and vegetable oil. Thank you.

    Thanks for a great recipe, again, John. I used the Schär brand of GF bread mix (I am in Germany) which made the dough almost like regular bread dough. I added a bit more water to make it more slack. Took 40 minutes to rise to the top of the pan. What a delicious bread in the end. My wife can now enjoy cleaning up spaghetti sauce with the rest of us. Kudos!

I've never tried it, but I would imagine it'll alter the balance of the recipe and like you say change the structure and taste of the bread, but no harm in experimenting Jim, but try the original recipe first so (No1), you can get some practise in making the bread, and (No2) so you can compare the two 😃😉👍.

    Hello John I have just made your gluten free sandwich loaf and it worked perfectly, thank you so much. Have you any other gluten free
    recipes? A "wholemeal" brown loaf would be especially helpful.

      Sorry Lidya, this is the only GF recipe at the moment, I do plan on making others when I have the time.

    Hello just asking if you have any tips on how do you get Ur bread not to burn quicker on top cook faster then the rest of the loaf and stay that golden colour ,? mine comes out darker and burns faster on top ,,taste is amazing thou inside or sink when I get it out ???

    Ok I just made this and it turned out nice now I will have to taste test it but I’m waiting until it cools down! WOW! I just tried it and I must say I love your version, I’ve tried other recipes and by far this is the best one, the crust doesn’t taste bitter like the last recipe I did, this tastes close to a real bread. THANK YOU JOHN!!!

      Hi John, just wondering if you did add the amaranth flour in this recipe, I seen your other review from Christie and you said you didn’t add the amaranth flour in parenthesize???? I did follow the recipe as you stated and it turned out perfect, would it make much of a difference if you added the amaranth flour???

      Sorry Charmaine you've got me a little lost here, are you talking about the Xanthan gum, The gluten free flour I used already contained the Xanthan gum.

    Thanks for sharing, it looks brilliant. I've never made bread before but as I'm Coeliac, I can't have wheatbread and none of the shop bought ones come up to scratch. Thank you also for the very clear instructions, i'm now confident to give it a try.

    hi john,
    this looks good, im going to try this recipe, ive just one question, could i use all bean flour, say haricot or butter bean ?
    my dad was a baker, he won prizes for his hovis, best in the land, he would be surprised at the dough but he would also have had a go,

    I love this recipe! It doesnt look crumbly at all. The on's we had is really crumbly and taste not really good. This is really good, moist and fluffy.

    Hello, thank you so much John for this recipe. Hard to be gluten intolerant: not funny ( i am french! How can I survive without bread! and lactose intolerant) and gluten-free products are more expensive! But I still bake gluten bread for my family ;)

    I’m allergic to wheat - so this recipe is a great help, thank you! I have problems with salt, so I left the salt out. My did I miss that flavor! So then I used apricot balsamic vinegar, it added just enough flavor! Today I’m going to try Bordeaux cherry vinegar. You’ve given me a great recipe to play with! And I love the water bath method of raising the bread, thanks.

      Salt, not only adds an essential flavour, it also helps with the colour and the shelf life, so if you can you really should include it, but experiment my friend, that's how we learn.
