He is really fast as compared to many fruits stalls here in Thailand. And to those who commended he wastes too much... there are many different types of pineapples in Thailand, this one we don't eat the core, it's hard and feel itchy in the throat. There's the other one with same size as human fist, we eat the whole if it.

Have you've ever worked the line in an American Restaurant? I've been doing it for 15+ years. Every single cook gets knife skills to this level just by working.
The real challenge is managing a line with 40 tickets on the board and 50 more hanging off the printer. Time management and raw cooking skills is what makes an American Cook. Flashy and wasteful cutting of a single fruit doesn't make a chef.
P.S. A chef is the head of a restaurant. They create the menu and run the restaurant. The Sous Chef runs the kitchen opposite the Head Chef and everyone else is a Line Cook, Short Order Cook or Prep Cook. Very few people are actually chefs (1-2 a restaurant)
