Farmers overseas welcome the employment of South Africans on their farms due to the fact that they have a proven track record of being hardworking with half the employment BS that they usually deal with from their own local work force. While this "work ethic" is obviously affected by economic conditions in the RSA and various other factors, South Africans are renowned the world over for doing a better job than most.
The Blacks and Coulereds do constitute the majority work force on farms in the RSA, this is true, but that has nothing to do with White farmers seeking better employment opportunities overseas.

You realize that regardless of salary, to get foreign workers is 30% + more expensive than local labour. So obviously the farmers would only pay more if the quality of work of South africans are way better or there are no other options. Nothing to do with race, research proves that there is a labor shortage on farms in the US.
