Very good overview, thank you! Subbed and wish you well.
(We're also in the UK but focus on budget emulation consoles, btw)

the moment I heard "sim card slot" I recoiled from the endless fighting i have done in the past with mobile networking on both linux and windows plus mobile networks keep changing every few years and phase out the old networks. steam deck for what it is good at its job (its job is to sell more products on there store and not be as cludgy as windows on handhelds) I blame mostly anti cheats for compatibility blunders also if you want to mess with different launchers try heroic game launcher

Can you explain what you mean by SIM card? Do you mean, if you dont have access to the WIFI, you'd like a way to do it other than your phone?

Yes, a SIM slot so you could have a dedicated, fast, mobile data collection so you didn't have to hotspot your phone.

VRR OLED is a thing but not in this form factor yet. LG OLED TV's and probably the monitors now too use VRR but i think the smallest is around 24''. if it was available and affordable valve probably would have used it. i just find the highest stable framerate and lock it and typically have no issues with that.

Vrr is nice but it's still only at 48+HZ on most

My main problems with Steam Deck, and reason I switched to Windows handheld were:
    1. Size of it, especially when it comes to traveling with it - when you put it in its case it becomes huge.
    2. Compatibility issues - I got tired of having to constantly tinker with it to get the games running
    3. Using other launchers. I tried using Heroic Launcher for GOG and Epic but had a lot of problems with running games (i.e. game would hang on install, or just fail to launch).

i dont get the size issue when talking about the steam deck compared to PC handhelds. rog ally and legion go are the same size if not bigger than the deck

the case makes it easier to carry around lol??? it tells you what games run perfectly fine or not also windows is more tinkering imo the laucher thing im not fully sure bc the only thing i did was install fallout new vegas and rocket league from epic on the steam deck
