RECIPE:
1. Season your steaks with your favorite steak rub (I love the Killer Hogs A.P. h2qshop.com/pr...)
2. Wrap the bones in foil to keep them from burning
3. Insert your ChefsTemp ProTemp Plus wireless thermometer and start the cook on your ChefsTemp app
3. Smoke at 225 until internal temperature reaches 100º
4. Sear on a hot grill at rotating 45º angles until internal temperature reaches about 132º for medium rare.
5. Let rest on the counter for 10 minutes, then slice
