Chocolate Stroopwafels | Chocolate Waffle Cookies with Caramel Filling | Jaja Bakes

Chocolate Stroopwafels are a chocolate makeover of the classic Dutch stroopwafels. It was adapted from my previous stroopwafels recipe, but with the addition of cocoa powder in waffle cookie dough. They almost taste like brownie cookies and are definitely not as sweet as the original ones.

- 1/4 cup milk (60 ml), warm
- 1 1/2 tbsp instant or active dry yeast (15 gr)
- 1 cup + 2 tbsp unsalted butter (250 gr), melted
- 1 egg
- 3/4 cup granulated sugar (150 gr)
- 3 1/3 cups all-purpose flour (400 gr)
- 3/4 cup + 1 tbsp cocoa powder (100 gr)
- 1 tsp salt
- 1 tsp cinnamon powder
Caramel Syrup
- 1 cup brown sugar (200 gr)
- 3/4 cup dark corn syrup (280 gr)
- 3 1/2 tbsp unsalted butter (50 gr)
- 1 tsp cinnamon powder
- 1/4 tsp salt

- 1 1/2 sdm ragi instan (15 gr)
- 1 cangkir + 2 sdm mentega tawar (250 gr), lelehkan
- 1 telur
- 3/4 cangkir gula pasir (150 gr)
- 3 1/3 cangkir tepung serbaguna (400 gr)
- 3/4 cangkir + 1 sdm cokelat bubuk (100 gr)
- 1 sdt garam
- 1 sdt bubuk kayu manis bubuk

- 1 cangkir brown sugar (200 gr)
- 3/4 cangkir dark corn syrup (280 gr)
- 3 1/2 sdm mentega tawar (50 gr)
