As far as I know the reason behind Robin's skin change in the anime is because Oda had never intended Nico Robin to have a darker complexion so the anime decided to change it Oda's original color scheme after the timeskip. That being said I do like Robin's pre-timeskip anime look better than the modern design.

The best assumption is the anime made their own assumption of Robin color design without thinking it was important enough to contact Oda, soemthing that happens with a lot of anime adaptations, only to realize later they made her darker than he intended. I think it's fine to mess with AI art as long as you don't sell it as your own. Oda knows this and as long as you don't go to far it's ok to use it. Regardless, we have no true, canon confirmation of anything Yamato identifies as, except for Oden of course. Not to say she can’t be claimed by the LGBTQ community, if they see her as an icon, sure. Objectively I think Kiku is a better written and better example of an LGBTQ character, I at least like her more than Yamato, but that’s just my opinion.
Also Japanese media outside the series exclusively refers to Yamato as a woman, it’s even on her Vivre card which while Oda dosent directly write, he does correct the mistake put on them. And also Oda included her in art of all female characters so at least from the Japanese side it’s certainly leaning in the direction of her just being a woman
