- In Sapporo Japan for the yearly winter festival and this city is known for its miso ramen and one of the best places for that is the traditional ramen alley Ganso Ramen Yokocho. So today going to stuff as many bowls of ramen as I can into my belly and go see some ice sculptures! Also filling up on a bowl of King Crab Ramen!

I went to a basement bar in Tokyo called Shinjuku Cactus that was run by a middle aged guy named Kenty who played glam rock the whole time we were there. The walls were covered in posters for similar bands. It was a trip.

The problem with having 17 Ramen shops is simple: You have to pick one and it becomes paralysis through analysis. You end up with 1 amazing bowl of ramen but end up with 16 regrets.

I just wanna explain about the braised pork in Sapporo.
In Japan, traditionally we use lean meat for Braised pork. Moreover, in Sapporo, for Sapporo Ramen, they use it more often than other Ramen in Japan because of the heavy flavor of the soup, they use lean meat to balance out, especially when they put butter into ramen, it's better with lean ones' if it's also fatty pork, it's gonna be too heavy...

Since I've been home because I was furloughed from my job, I've been planning out the trips I would take to Japan and I've been brushing up on my Japanese. I was able to read signs around the festival. Definitely on my bucket list!

We work with what we've got, for sure. I've scoured local ramen and almost nothing is available in my area. And even less good miso ramen. I'm nothing but more excited for when it's ethical to reopen. Absence makes the heart grow fonder.

Butter in ramen is absolutely amazing! Most ramen shops have that as a topping if you know where to look. Also, those boiled gyoza aren't as rare as you think. You'll find them in lots of abura soba shops in Tokyo. Great video as always!
