I got a trick for you chef. My grandmother used to put the hot, bitesized potatoes in a little bit of vegetable stock (i use chicken stock, it works as well). The hot potatoes will absorb the stock and they will taste incredible. But it's important to do that when they are hot. Let them cool down and go on with your own recipe. Sorry grandma for telling your secrets ;-)

In the international club they should write an essay on the subject of elephant.
The frenchman wrote about the love life of the elephant.
The Italian wrote about the elephant as an opera performer.
The german wrote: How to build an elephant.
The englishman wrote: The Imperial elephant.
Well, the Dane had not written anything at all. "What???" You have nothing to tell about a 5 ton animal???
Well, the dane said: "What a lot of steaks!"
The american asked: "Does it come with ketchup?"

Love potato salad. YES, it's worth making it 1 to 2 days ahead of time because the dressing, onions and spice flavors will be absorbed into the potatoes during that time and the result is much better than having it the same day. Also, it provides the potatoes to get coldest as possible which is also part of the experience. Red onions and celery are key too plus you can add some thin sliced hard boiled eggs into the mix for more flavor. Some will decorate the salad with sliced hard boiled eggs on top with a sprinkle of smoked paprika. Love this side dish in summer time.

Almost a year since this video came out, but I made this recipe today. I didn't have any fresh basil, but I just got some very fresh spinach from the local youth farmer's market and I made a chiffonade from that, why not?
Also, mine and my wife's family always added sliced hard boiled egg to potato salad as a tradition. So creamy and flavorful, It was so good, that's what we had for dinner by itself!

Hello my Friend! I love the way you explain that "if you don't like it, don't put it in". I have made so many different renditions of potato salad over the years, and discovered a recipe I absolutely love. Buttermilk is essential, as is the mayonnaise, sour cream and mustard. I've never used Lemon though, so I'm going to add that to this weekends potato salad. I usually use a vinegar for the sour, and a locally sourced honey. Wonderful tips on how to create delicious! Thank you for all you do,
    Bruce

    • @ForbiddenChocolate
      @ForbiddenChocolate Год назад +4

I'm going to try replacing the vinegar with lemon juice in my recipe too! I had a 🤦‍♀️ moment when he said that, I don't care for the flavor of vinegar so only use just enough to balance the honey without actually tasting it. A hint of lemon in the background might be nice!

spuds with skins on, mayo pimped up with raw egg salt pepper, dujon, splash malt vinegar all wizzed up. Add some hard boiled eggs all chopped up, diced white or red Onyon(!!) sweet gherkins diced and thats it. I have served this at 100's of functions and just about everyone takes the recipe home with them. PS winter or summer always does the trick.

I am making this tomorrow for 4th of July. My son is grilling pork ribs and some bratwurst sausages and this will go perfectly with it. I am going to eliminate the buttermilk because the buttermilk they sell around here is not the creamy buttermilk one imagines, but is a vile tasting concoction that will ruin the recipe. So today is July 4th and I made the recipe. It turned out delicious and the dressing is fantastic! Thanks for the recipe. I minced the red bell pepper and put it in a metal strainer, and plunged it into the boiling water of the potatoes for a scant minute. I drained it and dumped it into the bowl I was going to make the salad in, spreading it out so it could cool quickly. The red bell peppers we get here are tough as nails and I want crunch, not break a tooth on it tough.

Interesting! I have never seen potato salad with bell pepper, celery, sour cream or buttermilk. It looks pretty good though!
I haven't done it for several years now, since my father in law retired from the ranch.... now I get to be the "hired hand" for my husband! LOL
But I used to cater for weddings and anniversaries and I have made potato salad TWICE for 500 people & 400 people, and again... twice for 250 people! And not only that, but I also made cole slaw for all 6 of these events at the same time... and fancy deviled eggs for the two weddings for 500 people.
Let me tell you..... you can't imagine the hard boiled eggs I had to cook up for that!? LOL
Luckily, it was in October for one of these and I could keep the cooked, cooled potatoes outside in my coolers on the deck because I didn't have a large kitchen nor had the fridge space back then.
The day before the October wedding, as I was cooking and putting these salads and eggs together, my elderly neighbor's husband called me to say their meat that his wife was going to can, was ready to pick up at the butcher. His wife was staying with her mother about 3 hours away as she was in the hospital there, so wasn't home. -- So, you guessed it.... I was ALSO pressure canning 50 pounds of beef for my neighbor, while prepping for this big wedding. It was quite a feat, especially the next day as we'd had a blizzard overnight. The brides folks lived further North than I did, and barely got out of their driveway, just a couple hours before the wedding. I had to drive about 25 mph, the entire 45 miles to the event site with all my food. And man did we have leftovers, because only half of the guests were able to make it due to that blizzard!
I remember putting a large, old bedspread on my living room floor in front of the TV and put my husband and my two older boys, still in grade school back then, peeling potatoes on it, while watching movies, for the 4 biggest events! LOL I would take it from there and cook/cool/ then mix big batches before sacking it up in large zip bags and putting the bags in coolers out in my garage which was better than a fridge.
The recipe I used which everyone liked and I received a lot of compliments is below. ---It is one I got from the wonderful lady who taught both my mom and I how to do cake decorating! 😊
6 cups peeled, cubed potato cooked until fork tender, then drained, and cooled.
6 hard boiled eggs cooled and chopped
    1/4 cup diced sweet onion
    Dressing:
2 1/2 large scoops of Miracle Whip dressing (The large plastic spoons)
    1-2 teaspoons sugar
    2 teaspoons salt
    3 Tablespoons sweet relish
    2 Tablepoons regular mustard
Mix dressing ingredients and pour over the potato, eggs, and onion. Mix well!
It is best served after being refrigerated for a couple hours or overnight.

You know Chef, I'm a Southerner who never thought of the diversity and simplicity of adding non traditional things to my potato salad. I was raised to believe the only thing in potato salad was mayonnaise, mustard, potatoes, sweet pickle relish, maybe hard boiled eggs , some salt pepper and paprika.
However after watching this I will try to duplicate your recipe. Thanks for enlightening me!

    I'm gonna try this.
We grew up on my mother's potato salad which was basically deviled egg salad with potatoes. Lots of the yellow mustard and a little sweet pickle relish.
If my little brother would eat it, that's how it was made from then on!😂😂
    Thanks for the fresh variation!!!😊😊
