I think Debbie tries to be a strong mother for Mark, she is sucking up all of her pain hiding it and wants to show Mark the strong and reliable part of her, so Mark, as her child, could lean on her when he needs to. But in this moment all of this just burst open and she simply didn't want Mark to see her in this moment of vulnerability - not for her sake, but for Mark’s, as Mark needs a strong, normal parental figure to lean on after what Omniman did to him, at least in her mind.
That’s also why Debbie wanted to go on a little vacation with him, to bring back this sense of normality to Mark’s life, to be there for him and because she also needs this badly.
I didn't even think it could be about seeing Mark as Nolan, she is trying to act like a mother for a kid who just lost his father. Maybe she was embarrassed, but that's because Mark would know she needs as much support as he does, and she isn't as strong as Mark needs her to be. At least that's my interpretation.

I feel like Donald went to Tahiti...It's a magical place.
As for Mark and Debbie, I feel like the scene where she puts her hand on his chest as she is breaking down, maybe more primal than the thoughts you had on it. If you have ever just broken down and cried dealing with grief or pain or loss, sometimes the last thing you think you want is for someone to enter your space while you are going through all of that emotion. You need the moment to be angry or sad or whatever. After having that moment, Debbie was then ready for Mark to comfort her and allowed him hold her as she cried.

When someone you had complete faith in pulls a heel turn, it can throw all of your other relationships into question. You feel like you cant trust your own judgement anymore and end up conflicted because you still want to trust other.

"I CAN'T MARRY A FISH!" Yet another Invincible line that lives rent-free in my head for life. The first one was "the tissuuues..."

I think Debbie was having a sort of above the surface and below the surface situation where she was mostly having a moment she didnt want mark to see while still seeing some Omni man in him and deep down not really knowing if she belives that Mark isnt like his father

I can say that this episode seem to pull some interesting things and funny small bit moments throughout witness Mark’s storyline and being some wonders. As for your question about the Debbie’s scene. I feel like it get Mark is witnessing his mother being so traumatized and broken. As Debbie is feeling sadden to see her baby boy and not wanting him to see her broken. Till he reach to Hug her and let his humanity side come out to comfort his broken mother. We need to understand that Mark is both Vultrum and human but he carries more humanity within his friends, life and family. As well Debbie doesn’t want to lose her son with his super human side.

I lost my father earlier this year and have been in Mark's position of seeing my mom trying to be strong but sometimes she can't help but breakdown

I think both of your interpretations for Mark intimidating Dark Wing's sidekick are valid. Yes, he may be embracing his dark side, but he is also using the tools he was given to get himself free of a bad situation.
As for Debbie, I think you're first interpretation is more accurate. It is often that as a parent, one finds that they become the pillar of a child's life, their foundation, their emotional support. When your own support suddenly collapses and you can no longer be the strong fearless parent to your child that you want to be, it can be extremely distressing, embarrassing, and it can make you feel like a failure. All of a sudden, you can't comfort your child, _you're_ the one that needs comforting now. As a child, you may never think about how vulnerable your parents are until you see them cry for the first time. Mark was raised well, so at least he's able to pay her back and be her foundation for a little while.
Children take after their parents, and everyone around Mark keeps reminding him how he might turn out like his father, and I imagine from Debbie's perspective, she can't help being reminded of Omniman in Mark despite knowing from a logical perspective that he is a good person who stood up against him. So perhaps your second interpretation has merit to it too, which goes back to the Darkwing situation where Mark's dark self surfaced for a moment. Alternate versions of Mark have proven he could've very easily embraced his father's awful Viltrumite legacy.
Also, loved how they made 'Cecilia' and 'Donna' there.

I think Debbie was running through a gamut of emotions so I think it was both she was going through. However I feel it was more not wanting her son to see her break down rather than wanting tp push away Omni Man
