We have ones like those in Brazil too! We call them "moringa". Even in urban areas with fridges and freezers, a lot of people have a small moringa beside their bed so they can have cold water at night without getting up. The secret is in the unglazed clay, because it lets a little bit of water to through the clay, and when the water in the clay evaporates, it takes away heat from the whole pot, keeping everything nice and cold!
In the part of Mexico where I’m from, we don’t smoke it, but we don’t cure it either, we let the water filter through the pot, when I tell you that’s the best water I’ve ever tasted I really mean it, it’s earthy and fresh.
I remember drinking water from a jar like this in the rural area of my homeland Jamaica WI. My grandparents had a large one in the dining room area. We called it a " Spaniard jar"....cool refreshing water.
If I pour myself a bottle of water, I won’t drink it more than a few hours later because it’s been sitting stagnant outside of the fridge and bacteria is just multiplying. How long can water keep in something like this?

In mexico we use clay pots for water as well, apparently theyre porous so light water evaporation through the sides helps cool the water down even in the heat. And the water tastes refreshing because of the minerals in the clay

🇧🇷🇧🇷 In BRAZIL we have a genuine brazilian invention people all over the world love it. It is called " Filtro de Barro". It has the same properties than your clay pot ( it is also made by clay) the better characteristic it has than your clay pot it is that it FILTERS the water. 🇧🇷🇧🇷
The method known to me is by using dry green banana peels and some hot coal. If the pot isn't very big and heavy, you can turn it on its open end over the peels and coals for the smoke to envelope the inside of the pot. If it's big, hehehe time to figure out how to lower the peels and coal into the pot and cover for the smoke to circulate inside.
i would think the smoking of the clay water pot is to keep it free of algae, mold and pathogens from growing. ? Also it seems the burn might bring minerals or healing charcoal that helps heal and purify?

Any where.. rainwater,tap water ,wells ,streams depending on where you live.you bring it to a boil then put it in the pot before it cools .don't forget to cover the pot. Freshly smoked pots add a smoky scent and taste to the water.i think thats the best part

I smell my tap water after I ran it for a min or so, here in the USA. Most times, it smells of chlorine. Never use it for cooking.
