For the donation, I believe that you can replace the same items with reverse pickpocketing, even if the newer one has a better armour rating. That would require some form of melt down mod, in order to improve the armor and give it back. The same should be possible with weapons. But I believe an Iron Dagger has to be replaced by an Iron Dagger. Likewise with armour

Not quite. As far as I can tell, Bethesda made it so that there are equivalents on both sides. If you join the Empire, you get corrupt Maven in Riften. If you join the Stormcloaks, you get corrupt Silver-Bloods in Markarth. No side is really morally better. So, joining the Stormies may fix administration in Falkreath, but it will ruin it in some other place. The Empire vs Stormies conflict doesn't really have good guys vs bad guys, but morally grey guys vs morally grey guys.

I know it's been 2 months since you posted this video, but I know Nexus has a gift giving mod for Skyrim LE, so there should be something like that on Skyrim SE/AE.
Maybe there's a mod, but I don't think there's any way of removing the Jarl of Falkreath, without joining the Stormies AND without ruining things for some other place. Bethesda made the Jarls pretty morally equivalent on both sides. Pro-Empire corrupt Maven in Riften vs pro-Stormies corrupt Silver-Bloods in Markarth. Whichever side you choose, both sides have good Jarls, average Jarls, incompetent Jarls and corrupt Jarls. I remember some Stormie Jarl (I think in the North, in Morthal, I think) saying that she doesn't care about the place, but is using it as a ramp to get a better hold, like Riften. So, removing Siddgeir will help Falkreath, but some other place will get some moral equivalent on the pro-Stormie side. Plus, for role-playing purposes, I think it makes more sense for the Rangers to be politically neutral. They serve Kyne/Kynareth, not some politician and they would know, politicians would use them as tools. It's more heroic to just help the people of Skyrim, without expecting much from their leaders, whoever they are. The Rangers do jobs that help the people directly and that the leaders are too weak/incompetent/corrupt to do, without expecting titles and honours, without getting dragged in their politics and rivalries that only serve their egos and crush the ordinary folk. If a Jarl is good and aids them, fine, but they don't expect it/demand it. If a Jarl is corrupt, they still do their duty, but won't get involved in power-plays, since they have 0 expectations from political leaders, who they view almost as useless middlemen who tend to make things worse. They prefer if it's only between them, regular people and Kyne/Kynareth. That's how I'd see such a group.

A group of bandits that were starving manage to hunt their dinner down and just as they begin to celebrate, an insane member of Peta comes out of the shrubs and massacres them all. Oh, my brain, XD
The moment with the Jarl reminds me of this old story from D&D I remember someone telling on RUclips ages ago. Where he was a Paladin and Strahd von Zarovich (A pretty vile and reprehensible evil vampire) just shows up one day and tells him "Hey, I want you to deal with these marauders who are torching my villages" and how conflicted he felt because... you know, Strahd von Zarovich was asking him to do something. But what he was asking was to defend innocent people. But you know, it was so Strahd von Zarovich could have greater control over Barovia. But it wasn't like he was at a level where he could really challenge Strahd anyway (and he's functionally immortal, even if you kill him the "Dark Powers" there would revive him as soon as you go away, etc). I actually really love those moments in RPGs. Where you want to say something like "DIE MONSTER! YOU DON'T BELONG IN THIS WORLD!"... but... they're saying something you still agree with and feel the need to do... even if it's helping them out. Sure you might not like him, can't stand him... but he's asking you to kill ruthless bandits. Sure it's for the selfish reasons of "Well they're not paying me to NOT have them hunted down..." basically... but... are you just going to let marauders run free because you don't want to do a favor for the person who asked you to? More games could use moments like that.
Yeah far as I know the Civil War is the only way to depose any Jarls in the game, not just Siddgier there. Though seems odd that some Imperial Ranger Guild character would side with the Stormcloaks I suppose. But if his hatred is really that high of the Jarl I could see it. Kind of interesting how the dual loyalties there might go.
many people in politics have darker dealings even the trusty ones just do it think of it like this take away the coment of the jarl and see it as you taking out bandits also my live as an protecter or rest giver to the undead or a bandit slayer
Becoming Thane of all the holds could be a goal of this series. Being officially acknowledged as protector of ALL Skyrim would be epic indeed .
with the "donation" you could go and put the stuff in one of the barrels or something like that, just toss it in there and call it a day

You can try to find some charity mods, like ones that let you donate coin/supplies. I seem to remember there was at least one for the orphanage
Can use the gold from selling potions and weapons for the cabin . Another place for rangers more safety.

Ars Metallica is a great mod that allows you to break down armour weapons and tools.
