I have a recipe from a baking school I took that final dough weighs 900g but instructions says I need to stretch my final sheet to shape to 18” wide x 22” long. I just received the 15 dough sheeter. In your video you say that I can get to 22” wide but I measured my board and it only measures 15 3/4” wide. Seems impossible to get to 22” wide with it or is there a trick to it?
Thank you. Got it. I guess I would then need to roll it manually to get to the width of 18” then for that specific recipe but I think I can get it to 15” wide and 27” long for most of my needs. Can’t wait to use my new sheeter and test it out!
Just rolled out my first batch of croissants on the 15.5 sheeter. What a dream! This is a fabulous tool. I'm wondering if it's an appropriate tool for sheeting pasta . I tried a small batch but could not get it thin enough. Any suggestions?
We're thrilled to hear your first batch of croissants with the 15.5 sheeter went so well! Regarding sheeting pasta, we suggest trying to roll the dough more slowly and gradually decreasing the thickness after several passes at each thickness setting. We hope that helps and don't hesitate to reach out if you have any more questions.
The RS-201 board was recently updated and is now 39 inches long, so 4 inches longer than the old board. We don't have any plans for another update at this time.
The 15.5” sheeter folds into a suitcase like case for storage. The 12” compact sheeter can be disassembled into a few pieces that can fit into a cabinet. We don’t sell a case, but a tote bag would work.

Yes, it can roll our pie dough. We will say that if you want to roll our dough circles, it doesn't work so well for that, but it works well for square or rectangular shapes.

22” is the width of the 15.5” sheeter including the handle- so the not the width of the board, but the width of the machine.

If I want my final dough to be 3mm thick. Where should my settings be in the 15.5” sheeter to get to that thickness?
To get a final thickness of 3mm, set the main adjustment knob to 2.5mm and then set the fine adjustment knob to 0.5mm.

We have yet to try tortillas, so we can't say for sure. It is a little tricky to roll out rounds with the sheeter because of the way it works.
