yeah, what you ate was "bánh xèo" or sizzling pancakes (xèo = sizzling = the sound when the batter meets the hot oil/ pan). It's a great dish if you can eat vegetables with it, or else it is hard to eat because too much fat/ oil is used to make this dish. Banh xeo is a typical dish in the South and the middle region of Vietnam; the South tends to be larger and crispier, and the batter is made with coconut oil, so it will have a creamy hint. In contrast, the Middle region's banh xeo is much smaller, not as crispy, and uses a different filling type (usually seafood - squid, shrimp, etc). There is a very great banh xeo place in District 1 (IMO), but kinda on the upper side of cost, located at 32 Đặng Dung, Tân Định, Quận 1, HCMC; they also have different kinds of fried batter dishes too.
