Want to whip up classic Italian carbonara at home? The trick might just surprise you! Authentic carbonara recipes skip the cream! Yes, don’t use cream if you want to be as authentic Italian as possible. Instead, fresh eggs are used, coating the noodles in a creamy, golden sauce. Want to try it? INGREDIENTS
350 grams spaghetti noodles
3 cups water
salt
1 tablespoon cooking oil
1/2 cup slab bacon or smoked bacon, sliced
1/4 cup Parmesan cheese
2 eggs
2 cloves garlic, minced
cracked black pepper

My european husband told me that long time ago pasta carbonara is called coal miner's pasta. The coal miners in Italy made very quick & simple pasta after working whole day in the mine while their face is still painted gray and black from coals. Thus Carbonara pasta. :-)

I like the simplicity of this recipe.
No need for cream.At first I thought it will not be creamy. But this taste good. Just put a lot of parmesan to achieve a good salty taste. I also added basil powder to have a twist.
Good if you're only preparing for one or two person. But if you're trying to feed a family, cooking an alfredo sauce is the way.

Some commenters are missing the point of this channel i.e. making seemingly complicated dishes simple. And using ingredients that are accessible as much as possible. Whoever thinks getting guanciale or pecorino or whatever local italian ingredient is easy in the Philippines is out of his mind. Get over it, and just appreciate you're getting ideas of what to cook next from this channel.

Yes, the authentic Italian carbonara doesn’t use cream. The pig cheek is called guanciale but some use pancetta as an alternative. The cheese that’s being used is pecorino romano while some will opt to parmiggiano reggiano or a mixture of both.
And very technical to pull off. Too much heat will make your egg mixture turn to scrambled egg.

Napakasimpol po pla ng original recipe ng carbonara. Although may fats from bacon yet nutritious pa rin sya, carbs from pasta then protein from egg and cheese, simpol talaga! Napako ako sa carbonara na may cream but now I learned from your video. I will try this one, thanks for sharing Chef!

I agree with Chef Tatung. Real carbonara uses egg. Most of the recipes from You Tube especially from Pinoys says carbonara while using heavy cream. Thanks for sharing! and God Bless! LIKED and SUBSCRIBED.

i did this before without the cream but I separated the egg whites. nilagay ko ung egg whites s pasta then un yolk ginawa ko naka topping cya pasta. we broke the yolk bago kainin like pag kumakain ng sisig and also instead of bacon i used longanissang bawang from calumpit bulacan. ok nmn cya. but i also like ur version. will try it tonight for dinner. thank you so much for your creative recipes. ciao. 😁

Lardons po ang tawag dito sa London Po sa bacon na ganon po chef . Chef na try ko po yung tocino nyo pero with pork belly ( liempo ) and napaka sarap chef, inilagay ko sa oven with the marinade until cooked at naku po chef it’s melt in the mouth the sauce so yummy po with rice . Simple talaga ang Carbonara Tradizionale. Akala ko sobrang mahal ng Pecorino Romano pero mas mura siya kaysa sa Parmigiano Reggiano.

Carbonara was named as the poor man's dish dahil sa sinaunang panahon ang kadalasan na meron lang sa mga peasants (poor people from the past centuries) ay bacon, konting cheese, at eggs kaya parang instant food na ito sa kanila.
It taste good. I can attest to that.authentic italian carbonara. Ganyan lang kadali ang carbonara nila dito.
@@epoliciouz1029 Ang challenge ay dun sa pag lagay ng egg dapat constant swirling or mixing kasi baka mag scramble at tska wag kalimutan ilagay ang pasta water. Kapag may makita ka na mag scramble lagyan mo lang ng pasta water ulit tapos bilisan mo sa pag mix.
Masarap..my mama made this for me a few years back using pancetta (mahirap maghanap ng guanciale sa pinas). Hindi sya nakakasuya like the cream-based version

FYI: Pig's cheek is Guanciale or Pork Belly is Pancetta.
Pecorino Cheese is made of Sheep's Milk while Parmesan is made of Cow's milk.
Nagkakatalo sa meat at cheese na ginamit. Mas masarap ang Guanciale and Pecorino!
