I personally only upgrade my guitar when I've had enough experience with a stock guitar to know whether I want to change something or not.
I modded my first electric guitar, a Les Paul copy.
I rarely played it, but after modding it it gets played a lot
I had thought about selling it, but I wouldn’t get me enough to make it worth it.
I know I will not get back what I spent if I sold it, but it gets played now and so it was worth it.
Also some of the machine heads broke so they needed replacing
So from the original I changed the machine heads, nut, pickups, pickup rings, and added mini toggle and changed out other parts for cosmetic reasons, so it looks different and while looks are way down my list, this is cool.
Totally worth it to have a guitar I enjoy playing, it no longer sits in the case.
I got a cheap strat copy to upgrade, so I could learn how to diy it and then have a guitar that no one else has
I also found an inexpensive bass guitar that spoke to me; it had a good neck. I upgraded tuners and the bridge because I didn’t like those stock parts. I will eventually upgrade the preamp for something more robust and then decide if I like the pickups
I have an HSS strat with noiseless single coils and have pondered replacing them with DDT singles
To answer your question as to why I mod, partly to learn, partly to upgrade, partly to FAaFO
