I'm honestly not a big fan of defensing open moves. I don't think beginners should be learning those moves. Also high risk for injury. It's better to be strong and offensive.
I have a video on setting up for strap. It's all the same gym training, too. Strap really is about practice. Every time you touch someone's hand in practice, make sure it's in the strap.
