I was puzzled by that gauge at first too. 0 is boiling point for water 212. So 7 is boiling point for syrup 219. Once you get the 0 is 212 it all makes sense.

we would keep it warm and then filter it again later . we have since adjusted the way we do it and we now draw off larger amounts at once instead of a continuous drip. Thanks for watching!

right gauge. when the pans match the gague you'll be hedded in the right direction. my smokeylake 2×6 does 50 gallons an hr not pushing it hard
