Less pretentious, less demanding, it lets people enjoy for what it is, you cant have a north dish without people telling you ‘how to eat it’ or ‘how good the dish it’ when you yourself dont actually feel what they want you to feel.

Hey I tried this place yesterday. Alright, I have to be honest. I've tried the district 3 one that I think you are referring to, which probably is Hoa Ma on Cong Quynh street. I have to say, I still prefer Hoa Ma. What really set Hoa Ma apart was the pate. Their pate is like wow. I could go there and just order a huge plate of only pate. OK maybe not really but damn that stuff is good. Anyway, this place is still ok, their tables were all full at 7am on a weekday, quite a bustling place. Popular with students and young people, I think.

Since I'm a northern I don't really like southern food that my personal taste, I would recommend people to try southern food if you a fan of the sugary/ sweet flavor, if you fancy more savory/salty dish then northern cuisine would be more up your alley.
