I had the impression this piece by piece disassembly was done for demonstration purposes. It is a sales video after all. Other than that, there may have been a need to confine debris to a small area.

Think about the masons that actually built this chimney. The whole thing is held together by gravity. No steel reinforcing bars seen in the demo work.
