I used frozen tilapia and this turned out so good. It was so refreshing, full of flavor, and satisfying. I added some fish sauce at the end to balance the saltiness instead of salt and that added some extra umami :).

I was born in Alor Setar Kedah a northern state of Malaysia where I could get almost anything Thai in the wet market, my mom always buy the Gaeng Som paste and coconut shoots by the Thai seller from the Teluk Wanja wet market in Alor Setar, same taste you're having from this dish, my mom cooked it with pompret and it's sourish and spicy, it's making my mouth watery now hahaha i'm gonna just head home and cook Gaeing som now. XD

Hey Mark, the next time you go to Paris, France you have to try Breizh Cafe, it's a Briton créperie in le Maris in Paris, they make the mouthwatering crepe with Briton ham, Gruyere Cheese, homemade onions sautéed in their apple cider, and a fresh runny egg. It is one of the most delicious things you'll ever eat in your life and it is a relatively cheap meal, about 9$ a crepe. The address is 111 Rue Vielle (Pronounced vi-a) du temple (pronounced Tomp). It fills up almost upon opening at 11:30 so it's best to either arrive at 11:30 or go into the shop next door and they'll serve you crepes their too. Happy eating!
I don't see how people find Mark's signature head tilt annoying. I think it's a great way to show us viewers that he's really enjoying the dish. No head tilt = that dish sucks. It's like he doesn't have to say anything else.
Saw this video and I had to try it. I made it with striped bass and turmeric powder since I couldn't find fresh turmeric. Also I think my limes were much bigger than yours since I only had to use about 7 limes. It was delicious! I'm definitely making this again. Thanks for the video
mark, my wife was just listening to the video while we were chilling outside. at some point during the video, she said that she wanted that soup. I think your voice works well, too. what I didn't know was that some people consider a papaya before ripening a vegetable. I will run a few batches of turmeric in my way too clean blender to make it look like yours. cheers, chris

the easier way to fish out all the lime seeds is to pour in a little bit of plain syrup (equal amount of water and sugar) by doing this, the lime seeds will float on the surface of the juice. also, it's nice to see you cooking Thai food.
I come from the south of Thailand but live in Melbourne .This is my favourite curry .I can eat everyday aswell with fried egg and fresh local veggies .You remind me of my mom 's Gang som : ) .Have u tried Gang som with Ka moo ( Pork Hock Leg)with pickled green chinese cabbage .it s the best Gangsom ever !! roi jang hoo~~ Thk u for the video .

I like your recipe better, then what I saw before, because this is really spicy, like it should be, it must have your hair stand up, when eating. The best one I had in Songkhla. I had it with Mackerel too.
i did learnt this recipe from auntie in narathiwat, south thai. try add galangal and fingerroot, i'll guarantee it will enhance the taste to another level. instead of salt, normally they use fish sauce. and a little bit palm sugar, not for sweetness, just to balance the salt taste and enhance the flavor of fish meat.

MsLansones Thank you! An ocean fish would be best, but tilapia will also work fine. I believe the reason in southern Thailand that they prefer not to use freshwater fish is because it may have a more fishy taste. But I've had it before with tilapia, and it's good.
So you have a cleaver but chose to use the knife instead LOL :D We have a similar dish here in West Borneo, but my mom would always use pineapple. It is very good and refreshing. You should try this recipe with pineapple and skip the lime, it brings a whole new flavor.
mysingingbelly Thai people always use pineapple in this recipe. For this recipe you can use any kind of vegetable which you want such as coconut shoot, bamboo shoot, cabbage, cucumber, some kind of flower etc.

My mom uses turmeric powder quite often and it gives the food a lovely warm yellow tint, also it tastes good :D Don't think we have fresh turmeric available here, but still great video!!

Great video Mark, the dish looks amazing. I love that you used the whole fish. I do not think restaurants could get away with that here in the states. My partner would love this but has recently developed digestion issues with garlic. She likes the flavor and it was a sad day when she found out. In small amount it is manageable. Do you or anyone else reading this know a good garlic substitute? Thanks again Mark we watch all your videos together.
In Malaysia we have dozens of Thai restaurants but not many of them have Gaeng Som on their menus… me personally, i love Gaeng Som more than Tom Yum… the more sour, the spicier the better..🔥🔥🔥🔥🔥🔥🔥🔥
some people DO use tamarine paste, you can try both see which 1 you like best.For me the ones using lime gives a lime fresh and the ones with tamarind, i would add more Shrimp paste... totally up to you :) hope that helps

valiantmar Barramundi is easily available, but can be made with any type of ocean fish, usually a firmer fish works best.
