Filipino Champorado (Chocolate Rice) | Good Times with Jen

- Wake up to this sweet and savory chocolate rice porridge, topped with a special ingredient.
INGREDIENTS:
5 oz milk and dark chocolate, roughly chopped
5 cups water
1 cup sweet rice or sushi rice
Sugar to taste
Salt to taste
Toppings:
Sweetened condensed milk
Dried salted anchovies
STEPS:
1.) In a saucepan, boil 1 cup of water and chocolate. Stir until the chocolate has fully dissolved. Set aside.
2.) Rinse rice until the water is no longer cloudy. Boil 4 cups of water in a pot and add the rinsed rice. Reduce to a simmer, stir occasionally, and allow to cook for about 10-15 minutes or until thickened.
3.) Stir in the chocolate mixture, sugar if desired, and salt. Allow to cook for a few more minutes.
4.) Serve in a bowls with a drizzle of condensed milk and top with dried anchovies.

To those that are freakin' out about the anchovies bit at the end, in the Philippines, it is completely natural to pair up champorado with salted anchovies or with other dried fish (called "tuyo" in the Philippines). As Jen said, this is an OPTIONAL ingredient, you can still enjoy champorado's warm chocolatey goodness without it. Other substitutes for anchovies are bacon bits, pieces of beef jerky, or even pan fried tofu!

kiretoce with anchovies is ok for me, not bigger dried fish though. I haven’t tried jerky so I’ll try it. Hehe
we usually put danggit (rabbit fish) or tamban (sardines), not dilis (anchovies) on champorado.
Adding dried anchovies is similar to candied bacon on desserts. It adds a salty/savory flavour to the sweetness that works well. If you're not used to it, you may not like it. To each their own.

@@oneuniqueusername are you Filipino from the Ph or Filipino American? Because if you're feom here you'd know a lot of dried small fish or anchovies don't actually taste malansa or fishy when fried. a lot of them are so salty they taste more like sea salt than acruall fish.
@@redfullmoon yeah I'm Filipino-Brit living in Australia.. Love filipino food. Love the smelly stuff too like bagoong and i love Dangit etc.... But personally... fish in choc? Nope! But hey I haven't tried it yet. so I can't knock it yet..

Erin F you can use sea salt or some salty crispy bacon instead
redfullmoon I wouldn't recommend sea salt or any salt since it mixes and it just taste nasty I mean everyone is different so might as well try it

For those surprised at the 2 dishes having the same name: remember that the main route between the Philippines and Spain for 300 years was through Mexico, specifically through Acapulco. So Mexican and Pinoy sailors will learn about each others cuisines and share ingredients. Also chocolate is originally from Mexico, so it would be logical that 2 chocolatey, warm, thick deserts/drinks with a starchy grain will get the same name

Not completely different, just adapted... they substituted the corn by rice and added fish..... it happens with a lot of dishes or items brought from Mexico by the spaniards to Pilipinas....
If you don't like anchovies, just don't add them simple as that! Also this goes great with some French fries!

dried fish magically balances the sweetness of the champorado coz of its saltiness. this is a traditional comfort food. awesome for rainy weather
I love champorado! I've never tried it with dried anchovies. But I top it with evaporated milk instead of condensed milk.
Its even better if the anchovies you pick are the really really small ones ad then you tossed in brown sugar until they caramelize in the pan and then sprinkled with chopped thai bird chilies for that kick... makes a great pulutan (accompaniment to beer) too

we're malaysians eat salty anchovies with coconut rice.. Next time i'll try more filipino dishes especially this chocolate rice. Sound weird but looks delicious. Nice video. Keep it up👍

bacon is not that expensive but its tricky to find one. Bacon is pretty common in our provincial area but it's not majority's favorite.
as long as it's salty, it would be fine... champorado should always be paired with something salty to bring out the sweetness a little better :)

Using tablea chocolate in the champorado is way better for me because it has this rich, earthy, pure cocoa taste which makes the dish so delicious!
True. Nothing beats the chocolate tablea's richness and that grainy texture at the end of every mug of hot tablea....earthy indeed.
In the US salty bacon is often eaten with chocolate. Similar with anchovies.

The Mexican champurrado is more similar to "Chocolate de Batirol" than to the Filipino champurado. Chocolate de Batirol is also Filipino, but unlike the Filipino champurado which has rice in it making it look like a porridge, chocolate de batirol (also called as "tsokolate de batirol") is solely liquid (I like it viscous). We eat it with other foods like crackers or maybe toasted bread.
Tablea chocolate is better for champorado because it smell so good.

Lol we eat those dried anchovies in Korea too, often marinated as a side dish or to make fish broth, but we do eat it on its own too usually paired with beer. Never imagined you would put it in a dessert! Interesting!

We have a lot of cacao trees so my mama would make tabrilla and that's what we use for champorado. We use coconut milk which makes it creamier and richer. At home, we never paired it with dried fish but I like topping mine with cheese. I also use it as a dip for cheese flavored chips.

I put all kinds of milk ... evap milk, condensed milk and powdered milk .. yum! I add some bits of choc-nut sometines too ...
We used to do this after we finished eating the ripen cacao fruits from our backyard. Then, the seeds will be dried under the sun and once done, will be sent to be grinded. We boil the rice and then add the grinded cocoa powder... we just usually eat it with brown sugar than milk 😄
I always eat my champorado with tuyo. IT IS A MUST.

Anchovies (or tuyo) in champorado is really good, I have to tell you all.. The saltiness of the anchovies balances the sweetness of the porridge. It eliminates "umay" (I dont know what umay in english is lol)
