Pasta festival part 5: Pasta with octopus ragout - hearty and delicious recipe

- Majkl shows us in this episode how to prepare pasta with octopus ragout. The recipe is popular in Italy, as octopus can be easily bought all over Italy. No wonder that there is 7500 km of coastline in Italy.
Majkl first cooks the octopus in a pressure cooker, then add the octopus and the bouillon to make the ragout.
The recipe takes 40 minutes in total, 15 minutes to cook the octopus and then 25 minutes to cook the ragout.
Ingredients for 4 portions:
1,5 kg octopus (fresh or frozen)
8 tablespoons of extra virgin olive oil
3 pieces of peperoncino (use 1 pc if you like mild taste)
1 large onion
1 large carrot
1 celery stick
4 cloves of garlic
1 tablespoon of tomato purée (concentrate)
500g tomato purée
400g of canned tomatoes
1 glass of wine (rosé or white if you like a light ragout, use red wine to make a hearty and heavier ragout)
1 tablespoon of dried thyme or dried savory
juice of 1 lemon
4 tablesoons of grated parmesan cheese
350g of pasta (Majkl used calamarata pasta as he thinks that it goes best with this dish, ragout fills the pasta)
bunch of parsley
salt and pepper to taste
The recipe is simple. First Majkl cooks the octopus. He uses a pressure cooker to save time. A 1 to 2 kg octopus he cooks 15 minutes in a pressure cooker (takes 30 minutes to cook in a normal pot)
Then, he starts the ragout. While the ragout is cooking, he removed the suction cups from the octopus tentacles, cuts the tentacles into smaller pieces, add then to the ragout, and he also adds several ladles of the octopus bouillon to the ragout.
In total, he cooks the ragout 20 to 30 minutes. During the last 10 minutes of cooking the ragout, he cooks the pasta in salted boiling water.
Last step, he adds the pasta al dente to the ragout, and serves.
