Brava Jumo, never put cream in a traditional Carbonara alla Romana & yeah, from my understanding pecorino is what the Southern Italians use, parmiggiana is generally what the Northern Italians use from what I know. Same here in Australia, I have friends that claim they make a good carbonara then they say they have added cream. I respond "'ma veramente...che scifo vatene vaaaaa''. I'm first generation Italo-Australian but boy of boy there are plenty of Napoliane & Campanese there in New York and Jersey?????

Ralph (her dad) was my landlord for a couple of years. Everything he has is old money that was handed to him. When I moved out, he robbed me for over $2000. Initially he wrote me a check to me and my three roommates (we all had to go to the bank) and he didn’t have the funds to cover. When we moved in he had no problem taking 3500 in cash from me. Does anybody actually know the factual history of carbonara? Cause everyone seems to think the ingredients, cooking method, and recipe is set in stone. But all I find is controversy over that going back to the 50s.
To the day is still a mistery of the origin of the carbonara.
I have my theory,
Once upon a time(middle century) a beautiful Italian woman was making the "Gricia" for some American soldiers, one of them duin his walk ended up picking up an egg from the chickens coop and he had the crazy idea to add to his plate of pasta 🍝 and was so delicious that the next time other soldiers did the same and the ward spread around and there it was the "invention'"😊 of the Carbonara,
At this point another dilemma comes up that makes my theory crumble,why was it named carbonara as there isn't any relevance with the soldiers?🤔🙄
So my other theory is that was not an American soldier that added the egg but a mineworker decided to add eggs to provide him extra energy to go through the hard day of work.
Which one would you pick ?🧐🌝
