I’m 51 but always had a passion for cooking. I remember watching PBS and the cooking shows on there and going into the kitchen and cook something anything. We were poor and in the south so no fancy ingredients. I got a job at Shoneys as a bus boy and became a cook. Loved the intensity of it. Never followed up on being a chef because didn’t know how. To be young again I would get my ass in a kitchen under a chef and learn. Enjoy shows like this. Not over produced very low key but enjoyable.
Just so people know, this restaurant closed in 2003 (about 2 years after this was filmed) citing a lack of customers for this type of cuisine in today's market. The fans of Old World cuisine are a dying breed.
+Fajrin Shahrom.... yep that's Corey Lee as a young man, it was his very first kitchen job ever, Christian gave him his first opportunity, there's a great story as to how he got the job, after Lespinasse he would go one to work at Per Se under Benno, then The Laundry, and the rest is history.

I just had his book arrive last week, Mastering Simplicity. It's beautiful and his philosophy on food is so pure. A great, great chef.
