Great episode. Great show. Serious operation here. Chef does not play. Kudos. 👊🏻

Had lunch at the uptown one a number of times (they had a very reasonable prix fixe) and the food was always great. The dishes here are amazing, though. VERY expensive but looks delicious. One of Mike's best shows.

I appreciate the technical, physical, logistical and let’s not sugar coat it FINANCIAL achievements of this kind of restaurant but there’s definitely a feeling of it being soulless

Those paychecks and bonuses take care of that feeling.

Love the lesson from the proveyour! They must be putting a lot to kids thru college for them to send the owner and break down their product!

I had drinks and appetizers at Tao midtown east, 59 street? We didn’t have a serious meal, I didn’t experience anything like what was shown on this episode. No doubt their business is as hectic.

+SethHesio why's that Seth? I mean it is what it is, it's huge, packed nightly with tourists and bridge and tunnel types, but the food considering the crushing volume is really solid.

being a chef for 20+ years i am in awe of this place, the volume is astounding, and Chef Ralph's quality is unmatched at this level...I really enjoy the show and your knowledge and passion is infectious

Mike Colameco's Real Food I admire how they manage to do what they do.. but I just can’t imagine the stress that kitchen is under. I worry the chef/ manager might be a dictator !

@@SethHesio uhm, they have to be. Thats what being the head chef is. If you aren't a dictator and the cooks do as they please, you will have no order in your kitchen and it will all fall apart.

I’m a Calamenco fan from the aughts. When was this show aired? I’m going to guess 20 years ago?
