There is one very important ingredient missing -dill. I would advise mix chopped spring onions,cucumber and dill with a pinch of salt. Salt helps to enhance the flavours.and then mix with beetroots and other ingredients
Thanks so much for this video. When I was a kid my Lithuanian grandmother lived with us and she used to make this cold beetroot soup. I loved it but I had no idea how to make it. I’ll be buying beets tomorrow! My grandmother just used water from cooking the beets rather than using buttermilk, and put sour cream in the bowl of soup and we’d mix it in and see the soup become that lovely color. And she used to slice the cucumbers very thinly and cut them in quarters.
Same, I use water instead of buttermilk (and add sour cream into the plate). I've no idea how it would taste with buttermilk, probably not as good, my guess. I also chop some radishes, and keep everything separate in a container from the beet soup. Also lemon juice + vinegar is a must. I don't add any horseradish or mustard, idk if that's good either.
Never even thought of a beet soup before. I'm a little scared to try this one, beets are not a common flavor. I did just get a food processor though, so I can make it. Pray for me.

My eyes want to bleed when I see water poured to cold red beet soup. I’m not sure why it was invented, but probably just to make a bigger amount of it. Eastern Europe was pretty poor region in the past.

I use what ever I have by hand, most of natural yogurts work, yet I use milk instead of water to thin it out.
My Ukrainian-Polish "Ma Ma" would use Sour Cream. 90° near the Canadian border today....l just made a BIG batch......can't wait til it gets Ice Cold!
