I'm immediately wondering how good these would be if you dipped the dough into the sauce before filling and getting them (like birria taco shells). Could bring even more flavor into this recipe. I'm osho gonna try these with a bit of pickled red onion inside as well.

Cut some of them Scotch Bonnets up and drop em in there, too. :) Here around Texas/Louisiana we got meat pies and crawfish pies that are great but Spanish like Empanadas are the bomb! You did good, ma'am!

How do you freeze these? Some recipes you can just make them and put them in the freezer with some other recipes you have to do something cold with the ingredients? Do these freeze well?
