This is why I never listen to "nutritionists." In my lifetime, their stance on eggs, cheese, butter, sugar, and fat have flip-flopped like a fish on the floor of a boat. I avoided eating foods I loved for 30 years, and now I'm being told those foods were actually better for me than what "nutritionists" told me to eat instead.

She ain't wrong.
She is partially wrong, it's not the grain that's the problem but the pesticides, herbicides, and particularly the mercury containing fungicides that are the actual problems. Grains are only edible for 30 days. The fungicides/preservatives sprayed on grains causes them to age/ferment & turn rancid/spoil. This is part of the problem, and you still get all this with meat because that's what they're feeding the animals. It's a lot better with meet but still there.

Here in Europe people in some countries eat wheat every single day and are slim and healthy and reach a nice ripe old age. Not saying there aren’t any cons to grains BUT they are not the villains they are made out to be either.
Americans are always too extreme it's either never consume a grain again or let's eat 3 Big Mac Whopper Deluxe in one sitting. Even their bread is full of sugar and seed oil though so maybe they are right to avoid it. Moderation and a balanced diet is key though.

I began learning baking all kinds of things and cooking like I was training to become a chef when I realized the shiteshow of 2020 was not soon to end. My specialty was/is sourdough breads. When the autoimmune issues started, I dug in to research, thinking it was the glyphosate and other pesticides sprayed on our wheat and such. So I start finding grains and flours from private farms certified pesticide free and non GMO. THEN I find out even IF they were clean crops,we cannot break them down into single amino acids, but broken peptides that our bodies detect as foreign. It doesn’t matter if it’s fermented or not. I had to learn the hard way. And now how do I get my family to stop wanting it? It absolutely is more addictive than sugar, which I just learned this week. Great short Dr. Baker 🖖🏽

Just remember most grains you buy from the supermarket are ultra processed foods eg bread pasta etc. removing them from your diet will always be beneficial and make you feel better as it would for any UFP. Does that mean grains are inherently‘toxic’? I doubt it as evidenced by the French paradox
A voice of reason appears.
Grains are great.......if you're a pig, horse, or goat.....
Actually, not even for animals. Hence, grass fed. In the US great agricultural era of the late 1800s, most dairy cattle were fed hay and chopped pumpkins and other squash during the winter, grains were rare and harder to harvest than squash. Working horses might get whole oats, but the heavy reliance on grains was the product of 1930s depression era AG to promote income for some farms. Bad policy then, that just got continuously promoted.
Grains are perfectly fine in animals. That’s how they produce the good fats that we need in our diet. I think people get a little bit confused about it because of how the human body works vs cattle
@@user-sp1gw8gz3o Feeding them grains screws up the omega-6 to omega-3 ratio in their fat. Grass fed has the best ratio.

Now that I've cured myself after years of pain and suffering they are coming out of the woodwork.
Zonulin is a protein, not a toxic. Is the one that mediates in the permeability in the tight junctions to let pass the nutrients to the blood stream. But the gliadin in the gluten makes over express the zonulin and that is the problem, any kind of molecules start to enter the blood stream and begins a cascade of all kind of health problems.
It's all pretty simple ya know. Grains, sugar, seed oils. There's more but to eliminate just these will make a major, major difference in your health and longevity. Not too hard ya know.
Here's my problem with the anti-grain ideas. Why can so many people not be able to eat wheat here in the US, but go to a EU country and chow down on all the bread they want problem free? Only to return here and can't eat a bite of it without complications? What's up with our wheat and other grains? It's not different kinds or strains. My only guess is it's the crap our farmers profusely spray on it. I feel fine and actually do better when I make organic homemade bread and grain products. I wonder how much of our problems would go away if we banned the crap the EU bans.
Among other additives used in US are banned in european breads: Titanium dioxide (also known as E171); Brominated vegetable oil (BVO) (E443); Potassium bromate (E924); Azodicarbonamide (E927a) and Propylparaben (E217)
