Ainz isn't even disrespecting Gazef by freezing time. It's actually the opposite. He took the fight completely serious, as if he was against a high level player. Gazef is only around level 30 (by Yggdrasil standards) so it's a massive power difference. But, Ainz took it completely serious and used a time spell to take control of the flow of battle, something very important to do as a magic caster against a warrior. Making the fight take longer for no reason would've been disrespectful. Plus, he respected his wishes by killing him in a way so that he couldn't be revived. Also, you are basically correct about the role that Momon plays in the Sorcerer Kingdom. In that scene, Pandora's Actor is playing the role of Momon. The reason Ainz doesn't speak out loud is because Momon and Ainz have the same voice and that'd be super suspicious if they sound they exact same. So, since most people in E-Rantel know Momon but don't know Ainz, he kept quiet while Pandora's actor put on a show. Hope this help clear up most of the confusing bits in this episode. About the voice thing, MILD SPOILER AHEAD that will be in the first episode of season 4: Ainz uses a lip bug (the same kind Entoma, the insect maid, uses to change he voice) while out in public so that people still won't realize that they're actually the same person.

Clementine (The girl Ainz hugged to death in the first season) is basically the same level as Gazef and Brain are. *That* is the power difference between the two. In Ygdrassil even being 5-10 levels lower than an opponent *especially* at the max levels was considered almost *impossible* to overcome.
I'm with you regarding Gazef, he had the potential to accomplish more in the story than he did, overall. But don't worry, there are other characters left to love, and new ones introduced later! I was surprized by how well the writer manages new plots and characters!
Ains is honoring Gazef, he's treating him the same way he would a player from Yggdrasil. Ains is not talking since Pandoras Actor (as Momon) has the same voice as Ains hearing them both speak might cause people to think there is something with Ains and Momon possibly being together. The people think Momon is keeping Ains from killing everyone, so they'll tell any plots to Momon about rioting, and Ains will be alerted and prepared.
