I also use Minwax wipe on poly for lathe turnings. I don't do the shellac step but just apply 5-6 coats of Minwax. I sand only the fourth coat and find I can apply a fresh coat every 30 minutes, though I live in a pretty dry and warm area so your results may be different. It gives a stunning finish, crystal clear, and doesn't darken the wood as much as some wipe on finishes do. I love it.
Edit: The shellac step is really old school, and I commend you for using it.

is there a reason that you use minwax wipe-on vs. watco wipe-on?
No not at all it was at Home Depot on sale at the time. I am sure the other products work well.
