1 pound of Jamaican yellow pumpkin 1 chocha/chayote? 1 medium carrot 1 cob of corn 2 medium potatoes yellow yam 2 green onions 1 lime water 1 packet of beef & pumpkin soup mix 2 stalks of fresh thyme 1 scotch bonnet pepper spoonful of pimento seed 3 cloves of garlic, sliced chicken base powder 2 pounds of beef bones 2 TBS Jamaican all purpose seasoning powder Dumpling Dough: 1 cup of all purpose flour 1 tsp of salt 1/4 cup of yellow cornmeal 3 ounces of water Wash and peel the pumpkin. Remove the seeds. Cut it into uniform sized cubes. Add the pumpkin slices to a large bowl along with 4 cups of water, pimento, 1 stalk of thyme and the garlic.. Wash and peel the choccha. Divide it into 4 pieces. Cut into 1/2 inch squares and place in a small bowl with water. Wash and peel the carrot. Cut into little half moons. Wash and peel the potatoes. Cut into bite sized pieces and place in a small bowl with water. Season the potatoes with chicken base powder. Peel and wash the corn. Cut them into little spoon sized rounds. Wash the green onions and remove the roots. Dice the green onions. Wash and peel the yellow yam. Wash with lime juice inside a bowl. Slice into bite sized cubes and cover with water so it doesn’t oxidize (brown). Pour the bowl of pumpkin, pimento, garlic, 1 stalk of thyme into your stock pot. Add 2 tablespoons of chicken base powder, cover and cook for 5-10 minutes on medium to high heat. Add the fresh beef bones and cook for 1 hour to soften the beef. Pinch off pieces of the dough and roll it back and forth between both palms to form the spinners and round dumplings. Use your finger to make a large indentation in the center of the round dumplings. Drop them into the boiling pumpkin water. Add the yams and beef and pumpkin soup mix to the pot. Give it a quick stir. Cover and let this cook for 15-20 minutes on medium low heat. Test the tenderness of the meat. Add the potatoes, corn, chayote, 2 cups of water and Jamaican all purpose seasoning powder. Stir to mix well, cover and cook on medium low heat for 5 more minutes. Taste and adjust seasoning as necessary. Add the carrots, scotch bonnet pepper, 1 stalk of thyme and green onions. Give it a quick stir, cover and let it cook 5 more minutes on medium low heat until it thickens. Dumpling Dough: Mix all the dry ingredients in a bowl. Make sure they are incorporated well. Add the water and knead into a nice dough consistency (not too sticky and not to hard).

Looks good. I cook it differently, I don't use packet soup. Salt the beef from the night before, cook lots of veg (must use onion and garlic) with the beef and blend the veg out to give the soup body. Then add christophene, carrots, corn, potato, yam thyme, dumplings, pimento and scotch bonnet. Packed with vitamin and minerals. That's what I'll be cooking at the weekend.
