I think it is chosen based on how many 'actors' are 'on stage' when it is activated, which is why he returned to the starting point with Lillie chasing him. To ensure the play only had two 'actors' within range, causing the bankai to choose the tragic lovers play.

Shunsui represents a connection between the 'new' and 'old' generation of Shinigami- while he is old, him and Ukitake set themselves apart by being better than so many of those that preceded them. If you saw the Zanpakuto filler ark you would know that that is what one of his zanpakuto spirits looks like. He has two and the other one loves playing games while this is the adult spirit.
For those who don't know, the first game they played is just Red light Green light. chocolate inglés and Bodhidharma falls down (which is based on "Daruma ga Koronda") are just regional variations (because traffic lights didn't exactly exist hundreds of years ago when these games were invented).

But as he explained during his fight with Stark, he (Shunsui) doesn't choose the game, his zanpakuto activates any games as it wishes, and anyone within its reiatsu will have to play the game. Yes, it may seem confusing because he still calls out the name of the game, thereby giving the impression that he is the one activating it, but that isn't the case. Of course, Shunsui knows what game is being activated at any given time, it's now left for him to tell his opponent (or not), or his opponent figures it out. In this case, Bodhidharma Falls Down was 1st activated. And in the process of explaining the rules, shortly after Kageoni was activated. Which as you notice, he didn't tell Lille when Kageoni was activated, he just straight up attacked.

If you saw the Zanpakuto filler ark you would know that that is what one of his zanpakuto spirits looks like. He has two and the other one loves playing games while this is the adult spirit.
For those who don't know, the first game they played is just Red light Green light. chocolate inglés and Bodhidharma falls down (which is based on "Daruma ga Koronda") are just regional variations (because traffic lights didn't exactly exist hundreds of years ago when these games were invented).

Lille Barro recognizes the game as "Chocolate Ingles" (チョコラテ・イングレス, Chokorate Inguresu).

It is a processional bankai. So long as the actor (playing the role of the man) fulfills the obligations of his role (to harm, regret, and attempt escape) the play can proceed to its conclusion where he dies. It is a twist on one of the tales of a lovers su**de. He is confronted for cheating, lashes out, regrets it, and they decide to throw themselves into a river together; but as death approaches he regrets it and attempts to flee, which she forcibly denies him with an attack to the throat. Shunsui, Ohana, plays the role of the spurned lover (woman).
His shikai is “childs play” and his bankai is “an adult play”.

Maybe I'm wrong, but when Katen appears in the scene, she's doing 'Nō' or 'Kabuki' with the lines. That must be impossible in the English dub.

No, you are correct.
But as he explained during his fight with Stark, he (Shunsui) doesn't choose the game, his zanpakuto activates any games as it wishes, and anyone within its reiatsu will have to play the game. Yes, it may seem confusing because he still calls out the name of the game, thereby giving the impression that he is the one activating it, but that isn't the case.
Of course, Shunsui knows what game is being activated at any given time, it's now left for him to tell his opponent (or not), or his opponent figures it out.
In this case, Bodhidharma Falls Down was 1st activated. And in the process of explaining the rules, shortly after Kageoni was activated. Which as you notice, he didn't tell Lille when Kageoni was activated, he just straight up attacked.
