      It did seem to help will the smoke on the shoulder. It's doing some voodoo that I can't explain but the grill did seem a bit more stable than when I've done it on the classic II. It didn't fluctuate as much when I opened the lid etc and the smoke was cleaner too

    Got a link for the carrot shredder?
    I reckon home made pickled onions would be great with the pork as well.

      I thought it was a gimmick when I first saw it but it worked really well. We've just finished a batch of homemade pickled red onion so I'll have to get another batch made up!

    If you don’t have a slow roller would you cook for less time?

      Not necessarily. The SloRoller is designed to improve the smoke flavour and airflow through the grill (the science is way over my head) but it doesn't affect the heat. It's almost impossible to say how long a cook like this will take on any grill as there are so many variables. My best advice is to give yourself plenty of time..... A shoulder will hold for hours in a coolbox and still be good so better to start early!
