I love these pizza videos!!! I made the Grandma Pizza - bought all the ingredients from King Arthur and it turned out perfect!!!! My best attempt yet!!! I do see all the different pizzas that Martin demonstrates. There always is a different pizza dough recipe. Is there a way to have Martin video why you use 00 vs unbleached vs Italian Flour etc. What flour should we look at to make different pizzas. It would be so helpful!!!!! Thanks!

Scales are his best friend?? Maybe King Arthur needs to be told. Many of their recipes on their web site use volumes instead of weights. The seem to forget that most countries dont use their size cups, etc. Plus people dont always put the same amount of whatever into their cups.

The exception to this is amounts under a tablespoon, we switch to teaspoon and tablespoon measurements for these amounts as they're usually under 10 grams and a regular kitchen scale won't always measure this accurately. Could you give an example? All of the recipes I've seen on their website offer both volumes and weights.
