    Its been 2 YEARS since my first Daikon bacon recipe video and since then I've learned a LOT! I felt it was time to upgrade this vegan bacon recipe and WHOA did it work! The Daikon Bacon is by far my favorite veggie bacon and this definitely took it up a notch!

    Recipe:
    Ingredients:
    - Daikon radish, cleaned and trimmed
    - Coconut oil (optional)
    Marinade:
    - 1/4 c soy sauce (low sodium)
    - 1 tbsp black vinegar
    - 3 tbsp olive oil
    - 2 tsp liquid smoke
    - 2 tbsp maple syrup
    - 2 tbsp mushroom seasoning (or 1 tbsp nutritional yeast)
    - 1 tsp onion powder
    - 1/2 tsp paprika
    - 1/2 tsp black pepper
    Instructions:
    1. Peel the radish into bacon strips, i.e. long, thick pieces.
    2. Dehydrate on dehydrator's highest setting for about 2 hours. If you don't have a food dehydrator, put them in your oven (set to its lowest setting) for 2-3 hours.
    3. Combine all marinade ingredients and mix to combine.
    4. Soak all bacon strips in marinade for at least 30 minutes.
    5. (optional) Brush coconut oil directly onto bacon strips, then refrigerate or freeze.
    6. Preheat skillet over high heat.
    7. If you did not brush oil on the bacon, add oil to the skillet.
    8. Cook bacon

    Personal pointer: I've found while doing veggie versions of bacon and sausage that if you sub brown sugar for the maple syrup (not one for one, the amounts are up to you, subjective) you can get some of the same sweetness you're going for but it caramelizes a lot better without getting that overly cooked syrup texture/flavor that sometimes happens if the pan is too hot or you go too long cooking.

      dark brow or light brown? i feel like dark would add that molasses funk that would help with meatiness.

    I added a step to your recipe, namely after marinating I dehydrated the strips for a couple of hours at 165 degrees. This let me store them in fridge and fry up as needed, like real bacon. BTW, they are delicious. Thanks.

    Wonder if you dehydrated them again after marinading, maybe you’d get a ‘jerky’ type of outcome? Might be fun to try.. I’ve done that with jicama and it was pretty tasty but I bet this one would be phenomenal.

    I’ve commented before because I am not vegan but I just enjoyed your creativity. But I now have to stop eating red meat because I got diagnosed with gout. So turns out your channel will come in handy! Do you think you can try to come up with a birria or barbacoa recipe?

      I have gout also and I went starch based it helped but didn't get rid of it then I saw Dr Ken Berry gout video and I went keto that helped a lot but I'm thinking keto vegan is going to get rid of it all together I love sauce stache a lot of great ideas I really like the hibiscus tacos

      I've had birria with 'pulled (oyster) mushrooms' and it was delish! Just make sure to get an adequate proteim replacement in the meal as well, e.g. beans.

    There is a wider handheld food planer used for grating cabbage (slightly thicker slices) at the asian store for about 2 bucks, next to the peelers

    I remember how satisfied you were with the initial recipe for Baicon/Dacon so I couldn't wait for this video since seeing the community poll :D I absolutely LOVE how you are truly putting your experience and research into practice and level up many recipes of others or of your own. And this definitely turned out amazing! I have to finally test it out - never been a bacon person so I am not as inclined to do so but I guess it would be amazing on an avo toast.

    I think the ones you liked better was because they were very cold, and thus cooked slower.
    I dont think the coconut oil had as much of an effect as you think it did.

      It's slightly "peppery" - it tastes almost exactly like an ordinary red radish. I find it loses a lot of its bite when it is cooked.

    I found a maple syrup aged in bourbon barrels...omg- -next level. I also added 1/2t miso paste to the mix....thank you for this recipe! I have been missing bacon.

    I made 2 terrible batches following this recipe. The first because I didn't initially see that you're peeler had an arched back, so my straight backed peeler made paper thin strips that fell apart and got scorched;. I found that the lowest setting on my mandolin worked pretty well, though. And the second because my soy sauce is apparently way too strong, so it overpowered all the other flavors in my mix.
    I'm going shopping tomorrow, so hopefully I'll be able to give enough stuff to try and make this properly.

    Awesome! Ive tried making these a few times in recent weeks and I totally struggled with the salt step in the beginning. I’m not sure why despite wiping them they seemed painfully salty to me at the end and I wondered to myself if throwing them in the dehydrator might work too, can’t wait to try this method 😁

    One thing I did last time I made rice paper bacon was I soaked jackfruit in the leftover sauce and put that in the oven with the bacon. I put it in a wrap and it was so good!

    Out of curiosity Mark, have you ever worked with young coconut meat? Fresh it has such an interesting texture that reminds me a little of crab meat, but but makes a really interesting jerky when dehydrated. I have a feeling it could be a great ingredient for some interesting experiments.

    Try a light dusting of cornstarch. I bet the air fryer would give you a great crispness, in record time.

    FYI, in the oven at 170° F, on a wire rack, it only takes an hour. Beyond that & they shrivel up too much.

    Hey, Sauce Stache, quick question: Do you measure/control the temperature of your pan/olive oil somehow because my girlfriend always reminds me (and I looked it up online) that olive oil is one of the oils that shouldn't be heated up too much because it creates some carcinogen called Acrolein.

    Maybe mixing them up Daikon, with starch and covered in rice paper. I'm very aware now that all these are attempting to emulate a very different kind of bacon than I remember 35 years back. European bacon tends to be much bigger rashers and is more salty and has no maple syrup. Salting might be better for that sort of effect.

    How would you compare it to the rice paper bacon? More crunchy?
    Does it absorb the smoky marinade just as well as something less dense (like rice paper)?
