    Ingredients (Chilla):
    1 Cup Mung Beans
    1 tsp Salt
    1/2 Cup Chopped Onions
    1/2 Cup Chopped Cilantro or Parsley
    Ingredients (Filling):
    1 Cup Vegan Feta Cheese
    1/2 Cup Chopped Onions
    1/2 Cup Chopped Cilantro or Parsley
    1/2 tsp Cumin Seeds
    1/2 tsp Green Chili Peppers (chopped)
    1/2 tsp Black Pepper
    1 tsp Turmeric Powder
    Method: Soak the mung beans with three cups of water overnight, drain the water and add to a blender with two cups of water and blend for two minutes until smooth consistency. Pour the mixture into a large bowl and add chopped onions, cilantro (or parsley) and salt. Let it rest for 10 minutes.
    Filling: saute some cumin seeds with avocado oil and add freshly chopped green chilies and onions. Cook until the onions are soft (5-6 minutes) and add black pepper and turmeric powder. Stir well and add the vegan cheese (sliced in cubes) and cilantro (or parsley). Cook for a minute and set aside.
    Chilla: pour 1 and ½ ladle of the chilla batter into a flat cast iron (recommended) or non-stick cooking pan and spread the mixture into a tin layer. Cook for two minutes and flip it using a spatula. Cook for two more minutes and flip it back. Add two tablespoons of the filling, close the chilla on each side and remove from the heat into a large plate. Repeat the process until all the batter is used. Serve while hot for breakfast or a late afternoon snack. Enjoy!!!

    This looks absolutely delicious and I can’t wait to give it a try. Loved the filling and never tried vegan cheese. I know it’s made of coconut so it should be very healthy.
