I’m starting to make me an offset smoker, obviously I don’t have a problem with the actual making of one. But I don’t know that much about smokers… I’m learning 😜

Love the heavy steel but a smaller door. Still can work but not so heavy. In NC, the "pig cooker" is the main vehicle. They are frankly easy to use, this off set looks like you solved an issue I hate, fire box heat loss. Nice rig, no website and no prices so I'll make you an offer. I own a small soap company. Quick question now you mention it: is this kind of project doable with a stick welder, or am I asking for trouble?
@@therichieboy I don’t recommend it. If you are super talented welder is doable . problem is that with heat metal expands and that kind of constant friction with time that can cause problems.

Where do you get 24” pipe?
@@justinaxtell7028 from my work;. But any industrial piping supplier sells 24" pipe, it's expensive relatively speaking. Go to a welder shop that makes tanks and you should be able to get an off cut

When he was talking about the collector and the air having turbulence on the way out. What’s the problem with that?
How can I prevent the door from springing out when it is being cut out with a torch? Do you add the bars on the door before capping the ends? Thanks
One method I have seen is to cut the pipe lengthwise to "pre" spring it, then weld in some bar stock/plate to fill in the gap...
I really like this pit I just wish it had a collector instead of a reducer. The 90 degree change is kinda tough but in a pipe style pit with a reducer or just a straight pipe I’ve always had hot spots by the smoke stack. IMO reducers are perfect for propane tanks because the rounded end works really well as a reducer. It’s almost like you have both

Collectors are negligible
Unless you are fully loading the smoker from end to end, a "hot spot" at the stack would not make any difference on the cook. That being said, if the stack side of the smoker is building too much heat then you have an air flow problem. Most of the time I think people are building too big of a fire and having to close the stack damper down too much to lower the cooking chamber temp which will cause a hot spot on the stack side of the smoker. This is the beauty of a properly sized and well insulated firebox. You can build smaller more efficient fires and keep the stack damper most open to allow proper airflow. Another pro tip for fire, smoke, and temp management is: coals for heat and wood for smoke.

They basically use the heat from the firebox to heat the grill located on top of it
I’m real curious about the deflector vs no deflector. I keep hearing people say that the heat won’t travel up and across the food. It will be a bottom to top cook vs up and over. Thoughts on this?
A little deflector helps directing the heat to the right spots, big deflector on an angle 📐 don’t really work most reverse flow have more problems than benefit…

When it is raining does water getting into the smoker from the top? Or is it welded so water can not get into the smoker?
Water boils at 212 F or 100 C. Not an issue
And also you can get a rubber seal to go around the lid so it keeps water out when closed

@@shrimpbynightbythomas8212 I've wondered the same thing. Many people do. But, stainless has other metals besides iron that may not be desirable when heated. Who knows...probably cost restrictive is why.

Not necessarily
Peoria Custom Cookers are rectangular. The entire unit can be double walled and insulated, which is good for cold climates.

Sunny doesn't need a sales video. His reputation in the BBQ world is why his smokers of all sizes are in high demand and he ships them world wide. And that's why he has such a large back log. If you want one, make a down payment and get on the list. I did and picked up my 250 in March 2020. worth every month wait and every penny paid.

Is an insulated firebox really needed? I've read where you still have to add logs to it constantly like an uninsulated one, and it doesn't produce a smoky flavor to whatever meat is being smoke.

I heard where insulated fireboxes are needed in the states where cold weather is a major factor. I live in Texas. I'm deciding whether or not to buy a smoker with an insulated firebox. I want a smoker that cooks evenly and is more efficient. What are your thoughts? I'm taking you know about both.
@@joekerrytorres3027 insulated fire box tend to have a better consistency fire wise tend to spike less and burn less wood. About the smoke is all about fire management, beginners usually experience no smoke with insulated and too much with non insulated.
