In Brazil we usually mix both tapioca (polvilho) the Polvilho doce gives you a more gooey result and the Polvilho azedo will give you the crust.
If you like to use the Brazilian tapioca starch (polvilho) you can mix the polvilho azedo with the polvilho doce: 40% of the doce to 60% azedo.
Pão de Queijo
250g Tapioca starch/flour (polvilho)
137g milk
37g butter
1 egg
100g Gouda cheese
50g Parmesan
5g salt
1. Grate the cheese.
2. On a heatproof bowl, add the tapioca starch and the salt
3. Add the milk and the butter to a saucepan and bring it to boil
4. Once boiling, pour the warm milk and butter mixture gradually to the bowl with the tapioca starch mixing with a spoon until the temperature drops and is manageable to use hands.
5. Add the egg and continue mixing. The dough will get more sticky.
6. Once the egg is incorporated, add the grated cheese mixing until the dough is even.
7. Cover the bowl with a clean film and let it rest for 20 min (if longer, keep refrigerated).
Preheat the oven at 180oC
Roll the dough into small balls (golf size balls) and lay on baking trays with baking sheets. Make sure they are at 3cm apart.
Bake for 30min or until golden brown color.
Makes around 13 pieces
Tip: You can freeze the balls before baking
Mature cheddar is also a nice cheese to use.
