    Ingredients
    8 Hard Boiled Eggs
    1/3 cup of Mayo
    1 Tbsp of Dijon Mustard
    2 Tbsp of Finely Chopped Chives
    1 tsp of Granulated Garlic
    1/2 tsp (or more) of Lemon Juice
    Salt and Pepper to taste
    Soft White Bread Slices

    THANK YOU!!! You are the first person I have ever heard say that they like to taste the eggs. It is called EGG salad for a reason. If you were meant to taste the mayo then it would be called mayo salad. The mayo is only to hold it together and add a hint of flavor.

      Austin Frey eggs inherently have no flavor, that is why you add to them, they accept flavor well.

    I don't like egg white texture in big bites, so I like it when its really mushed up with a fork or potato masher. Love egg salad.

    Yum! To chop hard boiled eggs I put them in a bowl and use my pastry blender to quickly chop my eggs. Works great!

    LAURAAAAA I made this minus the garlic powder cause we don't have it here in Brazil, but it was soooo awesome!!! My husband had two!! I made corn on the cob just because that's what I had on hand to serve with it. I served it sort of warm an t was goooood!!! Thanks for the recipe! XOXO from Brazil!!!

    Just sitting down to enjoy this recipe I gotta tell you all LEMON MAKES A BIG DIFFERENCE! My family never really used lemon but what a great addition I suggest you give it a try!

    I have been eating egg salad sandwiches since I was a kid, in the 1950s. It is my favorite homemade sandwich. Laura Vitale makes a wonderful version of egg salad, so I guess I'll be eating it for the next 50 or 60 years, too.

    I think everyone has thier own add ins. I personally think celery should be in egg salad. Its what I grew up with. I kinda feel like you always make your moms recipe lol

    Everyone have their own version of this that they grew up on. I like egg salad actually had some today. The way I make mine is eggs, salt, pepper, paprika, & mayo. Simple but delicious.

    Very cool. I actually like extra mayo on my egg salad, and extra onions. I like it with one slice of cheese on each side of toasted white bread. It is amazing with chocolate milk.

    I literally just tried this and tbh I didn't think the eggs would be done . U have to wait 10min exactly, the eggs were perfect and tasted so good I was screaming LAURA VITALE . BEST EGG SALAD EVERRR!!!

    I have the exact same problem with egg salads having too much mayo. This recipe looks very yummy, and I will have to try it out! Could you do a video all about cooking meat correctly? I have the biggest fear of undercooking meat. That's why I don't make it and I let my mom make it. I am engaged and I need to get over that fear so when I'm married I can cook meat for my future husband. Some people may think I am playing into the homemaker role, but I do love cooking and baking! Raw meat just grosses me out. Idk what I can do to get over that!!

      Practice, Kelsey. Ignore those stupid patronizing comments above. Everybody has a right to their choice of lifestyles. If it makes you happy, that's awesome...that's all that matters. Be the best you can be in whatever you choose. Anyway, Practice, practice, practice. Just dive in. Wash your hands and just start handling meat. If your mom is cooking, hand her the meat. You got to get your hands dirty, that's the only way to get over it. I hope you have a happy marriage.

    I love egg salad. The first time I made this recipe I did not have a lemon but I had a lime so I used the lime. The second time I used a lemon like the recipe calls for. Today I used a lime again and I've got to tell you I like the lime better. It's a great recipe either way. By the way we use a green chef'n lime or lemon squeezer we bought at Amazon and it is really easy and gets every last drop of juice. I recommend it highly. Thanks for the great recipe Laura.

    Great recipe. I love a toast and egg salad. The combination of toasted bread with the egg salad is a hardy, scrumptious lunch.

    I agree that too much dressing ruins it. I put just enough to hold everything together. Like you, I don't use celery. I don't like celery in egg salad, but I always add diced pimento. Awesome.

    My 'killer' ingredient is a tad bit of fresh ground 'Horseradish'. Skip the garlic and add 1/2 teaspoon of horseradish. Horseradish adds that special kick to deviled eggs too.

    What a good idea to keep bigger bits of eggs instead of mashing up everything! I've always used this recipe, got it from my mother, but never put lemon in it, will try it next time!

    I don't think you need a lot of sauce because the egg yolks are so soft they melt into the sauce too.

    I just tried this. I didn't have celery so i used celery salt. Used green onions instead of chives cus I didn't have any. Miracle whip cus I didn't have Hellmans. Chopped garlic in a jar instead of granulated. It tasted great! Although I think I should've put a little more salt so I dashed some tabasco sauce for flavor. Perfect egg salad sandwich!     I normally put eggs in cold water and boil medium high for 13 minutes, rinse with cold water and let stand in cold water for a little bit. Then take them out, knock against the side of the sink and gently roll in my hands and they peel easy.I think I like your process better of heating up to a boil for one minute then turning off and covering for 10 minutes.Thanks - they were perfect!

    This looks delicious. Where I'm from originally my family would make our egg sandwiches by just boiling our eggs then toasting our bread, putting mayo on and slicing our hard boiled eggs and sprinkling with what is called vegetable salt and making our sandwiches that way oh so good but why I never thought of this is beyond me I'm definitely going to try this.

    egg salad is my favorite sandwich. never thought to put garlic powder in but will try it the next time i make it. if you don't have time to make home made bread, you could try no knead bread. all you do is mix flour water yeast and salt and let it stand 12 to 18 hrs. put in a pan then bake in a 450 oven with the lid on. there are plenty of recipes for this. it's like an old world peasant bread.

    I have to try the technique of chopped rather than mashed eggs. It looks great. I like red pepper for egg salad, but haven't thought of the garlic granules. You can also use onion flakes in a pinch.

    Looks sooo good..! But it NEEDS CELERY!!! and maybe some chopped red onion.. Just like tuna and chicken salad.. Although tuna salad also needs pickle and chicken salad needs grapes and almonds..

    I maid Egg Salad Sandwiches it was so good ,even better the next day. I ate half that night the rest the next day . Best of all I did not wake up to Egg soup like I use to thank you Laura .

    Sometimes I put pickle relish or chopped dill pickles - never lemon juice simply because I never thought of it. But what I always put in it is some ground cumin to taste. I love the smoky flavor it imparts!

    Hi Laura --- after you put the lid on the eggs, after boiling for one minute --- do you take it off the heat/burner? I do this with pasta but I take it off the heat & let it sit for 20 mins. with the lid on in order to get them al-dente (sp?), so was just wondering about the eggs. Thanks so much!     I like the idea of chunkier bits of eggs, and the garlic TYVM! But I also add dill pickles and cayenne as I like it spicy and salty/sour. I bet using an egg slicer would give a new feel to it, using the mayo mix as a spread....hmmm. (And your hardboiling technique is spot on! Do you agree that eggs peel more easily if not fresh? That's been my experience.)

      Lana rey Diaz too thin and runny. I don't use a lot of mayo, only for recipes like this that need it to hold other ingredients together.
      Try different brands too, they can have quite different flavours and textures to them.
