I'm surprised cows don't graze. Just in general. It'd support your grazer theory: island cows eat more and more grass away, giving mushrooms the chance to flourish and possibly "infect" the cows before gaining a proper foothold on the island, possibly using them as brooding bodies while the ground slowly becomes hospitable for the fungi.

Well that's because there isn't a bucket of stew. they just added the bowl function for extra *_flavor_*. I'm sure mojang didn't intend to say that the mooshroom can separate milk from stew as some sort of biological mechanism or recognize if the container used is a bowl or bucket. So I'm guessing they just forgot/didn't want to remove this function
I think the mushroom starts to consume all of the cow's nutrients when the cow feeds on the mushroom, like a form of parasitic castration (The cows we see could be cows that have not yet been fully affected by the mushroom, which could explain why they have a certain type of control over their bodies)
Fun Fact: You can milk mooshrooms to get regular milk too. Buckets give milk, bowls give stew... This means they have _both_ somehow. (as you already know by now lol)

I like the idea it can't succeed in a competitive environment. It explains why mycelium only appears on islands while not all islands are mycelium but I don't like the idea that mushrooms are separate and symbiotic with the mycelium. First off, mushrooms can grow into giant mushroom so as you explained, this contradicts most of your previous points, but also, symbiosis has to have a benefit. fungi are often symbiotic with plants, cause they can get minerals more efficiently, while plants can get sugar more efficiently. Mushroom - Mycelium union doesn't seem very beneficial. And if the only evidence is that they don't grow mycelium then I guess you can also throw out that the mooshrooms have mycelium in their skin that are growing the mushrooms/ grown from the mushrooms. In my opinion, mushrooms themselves are disposable _parts_ of the mycelium (like in real life) that can't grow more mycelium themselves (unlike in real life)
Interesting concept though I think you'd be able to reach a wider audience and have a better product if you worked on streamlining your scripts for efficiency. Right now you're part science lecture, part speculative biology, focusing in on the speculative biology and maybe picking a bit of a spin to it say having it be from the perspective of someone visiting there or something similar could do a lot for upping the entertainment and keeping attention focused.
