It is end of the month. And money is tight. So you go outside and go right next to closest river. Catch fish and make Ukha. Simple enough.
Cooking ukha with Boris very simple if follow these steps.
Ingredients:
1 medium sized freshwater fish. Can add more if needed.
1 onion
2 liters water (don't use river water)
1 large potato or 2 small ones
1 carrot
green onion
parsley
dill
bay leaf for taste
salt and ground pepper
vodka and semechki to pass the time (optional but highly suggested)

After cooking Ukha 4 times, here are my tips:
-Before starting with the recipe, put the whole fish in the boiling water for 20-30 minutes. This way you'll get a much fishier flavor.
-Feel free to grate the carrots.
-Use frozen dill and frozen fish for siberian authenticity.
-Use pepper from a peppermill.
-For choice of fish, I used two trouts.
This recipe has to be one of the blandest and most miserable dishes in the world.
On par with Irish recipe for coddle, where you basically just substitute fish with sausages. :D:D:D
@@dainkojebejutjub Of course you're right! Because it is the easiest possible recipe. In fact, everything should be much more elegant. In particular, one need to take three types of fish - perch for meat, pike for taste and catfish for fat. One need to add a glass of vodka in the pot while cooking fish so that it does not boil loose. It is a must also to make garlic-pepper sauce 'salamoor' to spice up the stew. In general, there are many important little things there.

We used to make Ukha in summer, always by the lake where we got the fish for the soup. On a big fire with a huge pot in the middle of a forest in Siberia. Ahh... good childhooh memories...
My Babička lived in Minnesota by a lake, we would cook something very similar every time I would visit. One time when I was 6, the only fish I caught was tiny, but I was so happy that it was my only catch of the day that she still made it, in a tiny pot, and served it proudly at dinner. I miss her so much. ....Still traumatized by the first time she killed a carp in the bathtub, though.
Wobbles and Bean my grandparents lived in china, and grandmother will cook something also similar, in the rice field they not only grew rice but raised a few hundred fish. I was also traumatized when my grandmother gutted the fish... the eyes looking at us

I love the fact that I was born in the states and yet this REALLY reminded me of my childhood. Like.... it was weird cause I never made fish soup before, but we would go fishing and eat the fish on the campfire and roast onions and potatoes on the side :) I'M GONNA TRY THIS FOOD NOW
In the philippines we have a version of this called "tinolang isda" perfect for tambays (gopniks) who has a nasty hangover. Perfect if cooked in wood as fuel for cooking.
i highly suggest using the fishheads for the soup. you dont need to eat them but they give good flavour.
this brings back memories of me fishing with my family when i was a boy. the fish was so fresh it still moved inside the pot hahaha.

I used to make this when I was homeless. I called it Underpass Stew from the stuff I could catch by fishing or snare trap. I had some bad potatoes so I cut them up and planted them. Within enough time, I had a bunch of nice potatoes and used to get dill from a field across the way.

in my childhood, we did make ukha in the fields. It had only fish, onions and spice (salt, pepper, bay leaf) in recipe. We took only onions with us as a food, everything else we got from forest, field and lakes. Never been hungry for days of hiking.

True slav advise - keep heads and tails of your weekly fish in the freezer until you have enough for ukha. They are simply perfect for it and this is going to be food almost for free.

Boris! I've been wanting to make this for a few weeks now and finally made it tonight. I overcooked the fish a little bit (I used Mackerel), my brother used all the potatoes, and I couldn't find any dill at the store, but it was still a good meal tonight while I wait for tomorrow's paycheck. Definitely want to try this again with fish I catch on my own.
