I just made the cake last week and wrapped it and stored it in the freezer for a week until I was ready to decorate it. I only have 9 inch round pans, so I multiplied the recipe ingredients x 1.27 (except for the baking powder - I kept that measurement the same) and the cake turned out great. I used Cacao Barry Extra Brute Dutch cocoa. I filled it with Ermine buttercream between the layers (I've never made a layer cake before and wanted to try this type of frosting) I frosted the outside with Swiss Meringue Buttercream (SMBC) that I flavored with Nutella. I colored some of the vanilla SMBC and piped flowers on top. It was a huge hit with my co-workers.
I will never make a butter recipe cake again, the texture of the oil recipe is exactly what I look for in a cake. Thank you for this recipe! I wish I could share a piece of my cake with you!

my absolute favorite cake is chocolate with 7 minute or swiss meringue. Nothing beats it. Thanks and I have never used caramel in the center but am willing to try. I actually use what I called "boiled" icing. egg whites beaten and sugar mixture cooked to 240 degrees. never fails and unlike my mothers (way long ago) this does not form a crusty exterior.

I love this lady’s recipes. I have to say her inclusion of metric values is a great boon for me as a novice British baker who likes to use scales.
