As someone who works at a bubble tea store they did a really good job :) 5 stars for chef yang however tip for next time most commercial bubble tea's let the tapioca pearls sit in a sugar syrup for a few minutes and make a separate brown sugar syrup to mix inside the tea, that's why it's so sweet. Also the tea is brewed for 5 minutes for a stronger flavour. I hope that helps!
I used to work in a bubble tea shop as well~ and also tried to recreate milk tea at home for years (when I was younger there weren't any bubble tea shops where we lived) I'd also add that the "original" bubble tea flavor is hardly ever done using fresh milk (my shop had another "fresh milk" series) but using milk powder, for me fresh milk tea tastes more bland while milk powder tea has a stronger "aroma" without watering down the tea? And also A LOT of sugar, a press of a button on the syrup machine in shops, but translates to a shocking amount for the home cook.

Pro tip: try not to wash/clean your tea unless it’s unprocessed loose leaf tea like theirs! Washing your tea beforehand will help loose leaf tea bloom and infuse with your water a lot nicer. If you do this with pre processed tea dust you’ll lose a lot of the nutrients in the tea and be left with a very weak result :p
@@oxoelfoxo well,not exactly. You only wash heavily fermented tea to get more flavor released and you should be careful cuz the water you use to wash your tea must be around 80°C . So basically you need to wash Pu'er for sure,and also some well fermented black tea. Oolong is like half fermented so that depends the tea leaves you have. My personal preference is that if you can easily see the green color of your oolong leaves,then washing is not really necessary, if you really want to then you should wash your oolong tea (for a teaspoon of leaves, 2 table spoon of hot water will be enough) for no more than 15 seconds. If the leaves are basically black for you, you just wash it.

That Black milk tea you made looks really white and diluted. Its suppose to be light brownish. you suppose to use 5 teabags worth of tea(10g loose leaf) for 2 pax steeping for 10mins minimum. Also if you are using Oolong/Jasmine/Green tea leaves, your milk tea be lighter in color. closer to off white.

ex-bubble tea barista here! the way brett and eddy made it is good, but if you want it to be more like store bubble tea you definitely need to add more sugar. i would make a 2:1 ratio of simple syrup and add to taste. also if you want cold bubble tea, brew the tea strong! my store did 10 g of tea leaves for every 400 mL of hot water. Yes, it's strong, but when you add ice, the ice will melt (because of the hot tea and warm boba) and dilute it.

I am a little Twoset fan from Hong kong, Here is the recipe: ingredients: dried bobas 100g (you can find it in taobao or Chinatown? IDK) black tea (According to how much tea you want) (you can use black tea pack then) brown sugar (According to how much sweetness you want) kitchenware: teapot (if you use tea bag, you don't need it) a pot a skimmer a rice cooker measuring cup or spoon (you can use electronic Kitchen scale if you have) steps 1: boil the water and gently pour the bobas in, cook it for 15 min. steps 2: transfer the bobas into the rice cooker, cook it for 20 min. steps 3: repeat steps 1 & 2. steps 4: add the brown sugar and some water into the pot, stir until the sugar dissolved. add the brown sugar into the bobas, stir to let the bobas all cover with the brown sugar. steps 5: put the black tea leaves into the tea pot's strainer, add hot water to wash it, throw away the water. put it back into the tea pot and add hot water. brew it for few min. (you can skip this step if you use tea bag) steps 6: add the bobas into the cup. add tea and milk, (maybe 1:1 or 1:1.5 ratio? IDK) stir it. (If there have any mistake, please tell me because I am suck at English)

ex-bubble tea barista here! the way brett and eddy made it is good, but if you want it to be more like store bubble tea you definitely need to add more sugar. i would make a 2:1 ratio of simple syrup and add to taste. also if you want cold bubble tea, brew the tea strong! my store did 10 g of tea leaves for every 400 mL of hot water. Yes, it's strong, but when you add ice, the ice will melt (because of the hot tea and warm boba) and dilute it.

Omg, my taiwanese mother in law gave me exactly the same rice cooker when I got married to her son😂😂😂 I'm Japanese and had never ever seen a red rice cooker like that in Japan. For me this 大同炊飯器 is the epithome of the taiwanese households😂

my mom's the same when giving me a recipe, like she tells me the ingredients, method of cooking, but nothing about proportions, it's always "as much sugar as needed" or "ginger to taste" or "whatever feels right" (and it always comes out bland cause i can't foresee the enormous amount "feels right")
I am a little Twoset fan from Hong kong,
Here is the recipe:
ingredients:
dried bobas 100g
(you can find it in taobao or Chinatown? IDK)
black tea
(According to how much tea you want)
(you can use black tea pack then)
brown sugar
(According to how much sweetness you want)
kitchenware:
teapot
(if you use tea bag, you don't need it)
a pot
a skimmer
a rice cooker
measuring cup or spoon
(you can use electronic Kitchen scale if you have)
steps 1: boil the water and gently pour the bobas in, cook it for 15 min.
steps 2: transfer the bobas into the rice cooker, cook it for 20 min.
steps 3: repeat steps 1 & 2.
steps 4: add the brown sugar and some water into the pot, stir until the sugar dissolved. add the brown sugar into the bobas, stir to let the bobas all cover with the brown sugar.
steps 5: put the black tea leaves into the tea pot's strainer, add hot water to wash it, throw away the water. put it back into the tea pot and add hot water. brew it for few min.
(you can skip this step if you use tea bag)
steps 6: add the bobas into the cup. add tea and milk, (maybe 1:1 or 1:1.5 ratio? IDK) stir it.
(If there have any mistake, please tell me because I am suck at English)
