If you want a terrifying undead monster, check the Boneclaw. Damn thing's nigh invincible and would absolutely dessimate any given party. It's a great stalker monster if you want to give the party that sense of urgency to finish up and get out of any given dungeon location. You could ise it to build up tension, have the party kill it, then it comes back and when they think they're safe again, BOOM, spring it on them again. Now they're on the run, trying desperately to figure out how the hell to get rid of this thing.
I had this dracolich for my players, sitting atop the mcguffin in the underdark. This campaign was epic, the chars prepared for 12 levels to be fit for the dracolich. Only it was not a dracolich, but an effigy of a dessicated dragon utiilized by some deep gnomes to hide their mining activities. But the non existent dracolich became a legend for the chars who were by now lvl. 17 and in search for a real dracolich. And they found one. Still, most memorable!
The Grim Hollow Monster Guide has some great additional undead monsters in there. It's become my go-to for interesting monster encounters. I often reskin stuff there for my own homebrew game. The players often have no idea what creatures they're fighting. :)
I dream to run a campaign were the material plane is corrupted/invaded by Orcus. With some undead like the Nightwalker and death knight but also encounter with creature that became undead due to the invasion. You talked about the death tyrant but what about the Illithilich?
So far been looking for any undead to use for just one of my villains (I've struggled to find ones since there's 15 in total, and didn't want repeats, luckily the undead one was easy). so far I kinda run with the idea of separating enemies into specific groups: Mooks, creatures, big threats, mini bosses, pets, & bosses, each one being fairly important when considering an encounter, as it be a bit weird, and potentially cruel, to simply throw like 900 undead Tarrasques at a level 1 party (unless your trying to kill them, in which case, get help). For a few mooks, besides basic undead like skeletons & zombies, you could also add something like Boneless, ghosts, or if you need specific undead, Vampire spawn (vampires) or witherlings (gnolls), etc. for a few big threats though, you got plenty, Banshee's, Deathlocks, & Bodak's are all good examples, same with more obscure ones like Brain in a Jar or Nechricor, which also could be considered Mini-bosses. and then of course, you also got a ton of great boss monsters. Liches & Vampires come to mind (one of the villains I have is even a vampire himself), but a few you could also use are stuff like Mummy lords, Death Knights, Dullahan, or even a Dracolich. As for creatures & pets, honestly use anything you can think of that makes sense in context. Its a bit difficult to find undead that work as pets or large creatures, but if your really looking for something that tickles the undead theme, then I think a flesh golem's your best bet.

@@TheFantasyForge They don't exist, AFAIK, but Tucker's Kobolds exists, and I figured that adding undeath to those clever, dangerous kobolds would make them even scarier. :D

My favorite undead is a Dybbuk, just a unseeming spectral jellyfish that defiles corpses in the worst possible way

Boneclaws and Allups are fun. The Barrowghast in Glory of the Giants is quickly becoming one of my favorites. For Tobias, I rolled a 16.🎉
