Thanks so much Cowboy Kent. I tried making pancakes in one of those newfangled "green" pans and they stuck like I put glue into the batter! But I used a cast iron skillet and they came off with no trouble at all. Cast iron is wonderful if you know how to use it and take care of it. Grandma was right!

Hey Kent, you brought a question to mind. My old Dutch ovens have been stored in my shed and admittedly, not in the proper way... (now I know) Anyway, my ovens stink. I think the old oil seasoning went rancid. So, I need some ideas about getting them back to new-like. I am on a few acres at the edge of town so we build outdoor fires all the time, just FYI. Thanks also for your videos. Though I am an old Boy Scout I'm afraid time has removed some of my knowledge and experience. You have helped in bringing so much back and teaching me things I never knew.
Bruce if they smell, after they have set for sometime, I burn them out either in a fire pit or a self cleaning oven and the start over. Thank you so much for watching
I just found you and subscribed, you're just awesome! I've had a cast iron skillet and a dutch oven for a few years now, and I've barely used them. I didn't really know how. I've had eggs stick, etc. I love omelets, and my non-stick omelet pan has bit the dust. I was going to replace it, went online and saw how expensive a new non-stick pan is, and thought, "I'm going to learn how to cook my omelet in my cast iron this morning". And I DID, and it was perfect and delicious, and didn't stick!! I grew up with cast iron, I knew how to clean them but not season them properly. I just wasn't confident in my ability to actually cook with them. And here you are, a wealth of information! Thank you, Mr. Rollins, for all the help you offer in every video! You beat me to it . Putting your pans in a paper bag . Back in the day that's all the stores put your groceries in . My mom cooked just about everything in cast iron . She bring the pans to the table and severed straight from them . Now that I'm older I use cast iron a lot . I really enjoy cooking over a fire pit . Or the wood stove in the winter . I put mine in an old refidgeorator in the garage . Coat them with a dab of oil and I haven't had no rust problems . Love your videos sir . And thank you for sharing

Hi Kent, Yea, ... it’s me the corpsman!!! I have picked 99% of my cast iron off the refuse route. It’s sad, but most people went for the glitzy, lite weight, super shiny imported junk and through out the old tried and true Grizwald!!! I live alone so I only use a few of the dozens I saved from destruction. I will have to go through them and see what brands I all have??? Some are in pretty nice shape and others will need some extensive work!!! With your videos I should be able to navigate through the process!!! Thanks again Art
Great tips. You probably will think I’m fetched but my folks used cast only as do I and in well over 45 years of use and storage here’s what I’ve found. Clean Season I pick the griddles and skillits of appropriate size and stack. THEY’LL RUST SAYS YOU! I have cut pieces of high quality corrugated card board, wiped with Grape Seep Oil and allowed to dry that goes in the pan whether another is stacked or not. I started doing this when I was restoring a real old and small farm house in the early 70’s. Space was at a premium. I’ve never had rusted iron and since the cardboard was “pre-seasoned” it doesn’t suck the seasoning out of a pan. I’ve gone off for 6 months, came home and All is good. Try it y’all might like it. Some great information in these videos. I have recently got into cast iron, have not used it or ate from cast in about 20 years since the last time my grandmother cooked in it, and boy oh boy talk about a huge difference in flavor.
Always wondered about my wife fussing about her iron pots and pans. She has the corn shaped ones and fish shaped ones, on and on. I just always thought man that's a lot of weight. Then I ran across one of your videos and showed my wife. She kept saying see, "SEE". I told you all that food you been enjoying came from those Great Granny, Granny's and Mom's iron. I started going through that Iron and she has all kinds of piece's. We are really enjoying finding out about them not just for the worth but for just the good fortune that all the kin folks always said, "We don't want all that heavy old caked up stuff. So My dear wife, always got them. We got more than 40 different piece's. Sure am glad we came across your channel. We are telling everybody about your channel BUT the in laws.;)

My only wish is that one day the prices here in the Netherlands are closer to the prices in America. Most cast iron is at least 2 or 3 times the price here. Thank you a hundred times over. I teach the dutch oven class at 4h horse camp. Usually this is the only time I use my dutch ovens anymore so after sitting for a year they smell bad and makes the food taste bad. I have always wondered what to do about that because I always have to reclean and oil them. Now I guess all I need are the minion paper towels. LOL

I use a steel spoon sometimes when cooking stews and such to get the grimmies off the bottom of the pot........ Those grimmies make the gravy in Cajun cooking.... No fake kitchen bouquet and other stuff in making a true gravy for beef and pork meals..... Yes we do make a country gravy like you do for fried steaks and biscuits and such.....

I sure wish I was able to emulate you. Except for the "Cave Man" and the snow episodes, you're always properly dressed in style. I sure admire all the different hat's you have at your disposal. Kent, I've got a different take on your 12 inch set. Since I very rarely cook outside, my 12 inch set, a 12 inch skillet, A 12 inch deep (5 qt) skillet, also known as a chicken fryer. A 12 inch indoor dutch oven. I also have 3, 12 inch lids, 2 with the ears for covering the pour spouts. (The 12 inch deep, doesn't have pour spouts.) steve

Kent, I love your videos, and recently converted to cast iron from Teflon. I have also bought a few things from your store and they work great. I do have a question about your 12 inch Griswold skillet. What size or number is it? I have started to buy a few Griswold skillets but none are exactly a 12 inch. A Griswold #11 is 12 1/2 inches at the top. A Griswold #12 is 13 3/8 inches. Thank you and God bless.
Clean fresh peanut 🥜 Cooking oil and crisco shortening cooking grease works awesome down in Mississippi wipe it down good all over and I wrap em in news paper leave it oiled up and the paper inside close to cast iron oily also !!!
One of the ones I use a lot is a Griswold square skillet. If it's more than just myself I will use my chicken skillet also a Griswold. Was lucky a few years ago and found Griswold lids to fit two if my round Griswold skillets. At $10 a piece I jump on it. Now looking for one to fit my square skillet. Just a old country Gal from Creek Co Okla.
Cowboy Kent Rollins Something I do is when I barbecue steak is put a extra one on. I freeze the extra one for another meal. Now I tender rise it then bread it and fry it for my chicken fry steak along with country gravy . Makes a great chicken fry.
Mr. Rollins how many quarts is the 12” shallow Dutch oven and how many quarts is the 12” deep Dutch oven? I grew up using and have always used the cast iron skillets but just recently have gotten into the Dutch ovens for all of our hunting trips and camping trips and was inspired by watching your channel so I do appreciate all of the info on all of the cast iron! The Dutch oven I purchased was the Lodge 12” 6 Quart Dutch Oven which I’m assuming is the shallow but wasn’t sure how big or how many quarts the deep oven was? I would replace the short DO with a deep skillet. Some version were called a chicken frier but not all. I have a one notch lodge from the early 30s that is a version of the combination cooker. Smooth bottom. Lid doubles as a skillet and it will hold coals also.
After I clean my cast iron skillet(and it's dried thourghly) I smear coconut oil on the sides and cooking surface, then I store it in a paper bag.i swear the coconut oil"heals"the surface rust too!
Hi Kent: Have you tried the 'chain mail' cast iron scrubber? Got one at 'kitchen store' a while back. Works great! (back ground-- grew up in Weleetka OK in the 1950's; been doing DO cooking forever. Now you Keep up the good works!

I use a steel spoon sometimes when cooking stews and such to get the grimmies off the bottom of the pot........ Those grimmies make the gravy in Cajun cooking.... No fake kitchen bouquet and other stuff in making a true gravy for beef and pork meals.....
Yes we do make a country gravy like you do for fried steaks and biscuits and such.....

Every time I view one of your videos, I learn a passel of info. I knew about the rice but not about the brown bag and zip ties.
I sure wish I was able to emulate you. Except for the "Cave Man" and the snow episodes, you're always properly dressed in style. I sure admire all the different hat's you have at your disposal. My collection is quite a bit smaller than yours. Maybe its the way your camera is set up.
All in all, another great production.

12 inch set. Since I very rarely cook
outside, my 12 inch set, a 12 inch skillet,
A 12 inch deep (5 qt) skillet, also known
as a chicken fryer. A 12 inch indoor dutch
oven. I also have 3, 12 inch lids, 2 with
the ears for covering the pour spouts.
(The 12 inch deep, doesn't have pour spouts.)

Judging by these methods:
Towel Paper Bottom, rice in it, Towel Paper, Stack the other. REPEAT.
Kent, I love your videos, and recently converted to cast iron from Teflon. I have also bought a few things from your store and they work great. I do have a question about your 12 inch Griswold skillet. What size or number is it? I have started to buy a few Griswold skillets but none are exactly a 12 inch. A Griswold #11 is 12 1/2 inches at the top. A Griswold #12 is 13 3/8 inches. Thank you and God bless.

Clean fresh peanut 🥜 Cooking oil and crisco shortening cooking grease works awesome down in Mississippi wipe it down good all over and I wrap em in news paper leave it oiled up and the paper inside close to cast iron oily also !!!
One of the ones I use a lot is a Griswold square skillet. If it's more than just myself I will use my chicken skillet also a Griswold. Was lucky a few years ago and found Griswold lids to fit two if my round Griswold skillets. At $10 a piece I jump on it. Now looking for one to fit my square skillet. Just a old country Gal from Creek Co Okla.

Something I do is when I barbecue steak is put a extra one on. I freeze the extra one for another meal. Now I tender rise it then bread it and fry it for my chicken fry steak along with country gravy . Makes a great chicken fry.
Mr. Rollins how many quarts is the 12” shallow Dutch oven and how many quarts is the 12” deep Dutch oven? I grew up using and have always used the cast iron skillets but just recently have gotten into the Dutch ovens for all of our hunting trips and camping trips and was inspired by watching your channel so I do appreciate all of the info on all of the cast iron! The Dutch oven I purchased was the Lodge 12” 6 Quart Dutch Oven which I’m assuming is the shallow but wasn’t sure how big or how many quarts the deep oven was? I would replace the short DO with a deep skillet. Some version were called a chicken frier but not all. I have a one notch lodge from the early 30s that is a version of the combination cooker. Smooth bottom. Lid doubles as a skillet and it will hold coals also.

After I clean my cast iron skillet(and it's dried thourghly) I smear coconut oil on the sides and cooking surface, then I store it in a paper bag.i swear the coconut oil"heals"the surface rust too!

Hi Kent: Have you tried the 'chain mail' cast iron scrubber? Got one at 'kitchen store' a while back. Works great! (back ground-- grew up in Weleetka OK in the 1950's; been doing DO cooking forever. Now you Keep up the good works!

Iron must be gaining popularity. I recently saw $200 cast and machined iron skillets at a gourmet grocery.
Mr. Rollins, great educational video. Could you recommend some affordable cast iron options (or should I save up for a griswold)? Would you consider Lodge Cast Iron Skillet 12 inch to be worth buying? I also noticed many new cast irons have been pre-seasoned, should I scrub all that off and start from scratch? Thank you for your help!
If you can find the old iron it is best the new preseasoned lodge is so rough I sand it down and then start over
