Hi there! Though we haven't tried whole egg powder but we think it would work as well. We would start with using half (that would be 2 1/2 tablespoons) You'll just have to see how it thickens up. Your right! It is used as a thickener but also adds some flavor. You can use the whole egg powder you have. You can also most likely leave it out or just hard boil and egg and only take the yolk and microplane it in. Let us know how this comes out for you. This was one of our families favorite dishes.
