Easy Recipe Everyone Will Love! Pink Oyster Mushroom Nachos Episode 4 This Recipe Reminds Me Of

- Check The Vibes!! Welcome to I dont know too many people that do not like or love nachos. Crunchy tortilla chips loaded with flavor and different textures. I have been vegan for six years but have always had a thing for nachos. Nachos were one of our go-to dishes when I was younger after partying all day with the homies. The matches always left us feeling weird the next day. In this episode, I am recreating these nachos but making them vegan. I am using Pink Oyster and Blue Oyster mushrooms for the meat.
I hated mushrooms about three years ago. I hated how chewy they were and the mushroom taste lingering after they were prepared. That all changed when I started cooking Lion's Mane. Depending on the mushroom type and what I am making, I remove all the water before adding the flavor when cooking mushrooms. I use a cast iron pan and a press to help me get all the water out. You can use a pan if you dont have a press. Once the water is cooked out, you can add a marinate to the mushrooms, and they will absorb the flavor. This method works perfectly if you are making carne asada-style mushroom meat. As you can see in the video, the flavor looks crazy and tastes as good as it seems. This is just something that I do, and I wanted to share.
This is a classic recipe that I collaborated on with my good friend about two years ago. I have updated the recipe to add even more flavor, which can be found in the Turnip Vegan Recipe Club, along with 90 + recipes I have made in the last three years, including some of the new recipes using mushrooms.
Recipe Below
Ingredients:
A batch of Pink Oyster
Marinate:
1/4 avocado oil or olive oil
1 Tsp of cumin
1 Tsp chili powder
1/4 cup of Cilantro
1 Tbsp lime juice
1/2 cup of oranges juice
4 cloves crushed garlic
3 tbsp vegan Worcestershire sauce
Few drops of liquid smoke
1/4 Tbsp of coconut aminos
Salt & pepper to taste
Nacho Ingredients:
Vegan Melted cheese.
Chopped jalapeños
tomato, diced
Guacamole
Green onions, chopped
Cilantro chopped
Vegan sour cream
Step 1. Chop and prepare Lion’s Mane
Step 2. Mix 1olive oil, cumin, chili powder, cilantro, lime juice, oranges juice, garlic, Worcestershire sauce, liquid smoke
coconut aminos, salt & pepper to taste.
Step 3. Marinate Lions Mane in the sauce. The longer it marinates, the better.
Step 4. Drain, Grill, and Serve.

fun fact: it is almost impossible to overcook mushrooms, as their cellular walls are made of chitin, which does not break down until about 380 degrees Celsius. What this means, is that to well and truly overcook them, you would need to modify your oven to heat to 400 degrees Celsius or put them into a fire. Using a regular oven, however, it is damn near impossible.

Vegan for almost 3 years. Those bubble guts used to get me. Of course, my doctor told me it was normal. I knew it wasn't normal so I decided to cut out the one thing I had left: Dairy. Bubble guts no more! This looks delicious.

I do keto and I love your channel & recipes. As a diabetic I have to change certain things to be very low carb so I’m trying to adapt to your recipes. I need to still eat some meat for the protein though I like meat less and less all the time but at 70 yrs. I really have to eat some meats to stave off sarcopenia but I’d like to hit the right balance for me. I love beans but cant eat them cause they cause my blood sugar to go up too much but I’ve recently learned about Lupin beans and hope to sub those in. They are very high in protein and fiber so I can eat those. However they are a real pain to cook properly. But I really miss beans.
